Ingredients

  • 3 eggs
  • 2 tbsp milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray or a small amount of oil/butter
  • 2 tbsp shredded mozzarella cheese
  • 1/4 cup cherry tomatoes, quartered
  • 1 tbsp fresh basil, chopped
  • 1/2 avocado, thinly sliced

Instructions

  1. Beat the eggs, milk, salt and pepper in a medium bowl until combined.
  2. Heat a medium nonstick skillet over medium heat.
  3. Lightly spray or grease the pan to prevent sticking.
  4. Pour half of the egg mixture into the skillet and cook for about 3 minutes, until the edges are set. Sprinkle 1 tablespoon of mozzarella over the top and cook another minute to melt the cheese, then slide the omelette onto a plate.
  5. Repeat with the remaining egg mixture to make the second omelette.
  6. Top each open-faced omelette with 2 tablespoons of cherry tomatoes, 1/2 tablespoon chopped basil and 1/4 of the sliced avocado (or arrange to taste).
