Ingredients
- 1/4 cup coconut aminos
- 1 tbsp lime juice
- 2 tbsp apple cider vinegar
- 2 tbsp apple juice
- 1 tbsp Thai red curry paste
- 1 tbsp Litehouse Garlic (or 1 tbsp minced fresh garlic)
- 2 tbsp Litehouse Cilantro (or 2 tbsp chopped fresh cilantro)
- 1 tsp Litehouse Ginger (or 1 tsp grated fresh ginger)
- 1/2 tsp kosher salt
- 1 tbsp olive oil
- 2 jalapenos, minced
- 2 lb beef chuck roast, cut into large cubes
- 10 iceberg or butter lettuce leaves, for serving
- 1 tsp sesame seeds, for garnish
Instructions
- In a medium bowl, whisk together the coconut aminos, lime juice, apple cider vinegar, apple juice, Thai red curry paste, garlic, cilantro, ginger and salt. Set the sauce aside.
- Set the Instant Pot to Sauté on the normal setting.
- Add the olive oil to the pot. When the display reads “hot,” add the minced jalapeno and sauté 2–3 minutes.
- Add the beef cubes and sear for 1–2 minutes to brown the exterior.
- Cancel the Sauté function. Pour the prepared sauce over the beef in the pot.
- Secure the lid and set the steam valve to sealing. Select Manual (High Pressure) and set the timer for 30 minutes.
- When the cook time ends, turn the Instant Pot off and let it sit for 5–10 minutes, then carefully release any remaining pressure and unlock the lid.
- Use two forks (or meat claws) to shred the beef in the pot, mixing it with the sauce so the flavors meld.
- Spoon the shredded beef into lettuce leaves, sprinkle with sesame seeds, and serve immediately.
