How to make Vegan Pad Thai Noodles

These “noodles” are just zucchini, turned into long, thin strands with a spiralizer or vegetable peeler. For two servings, spiralize about four medium to large zucchinis. Because zucchini contains a lot of water, press the zoodles between paper towels or a clean kitchen towel to remove excess moisture before cooking. The zoodles replace rice noodles here, keeping the dish light while still offering a great chew and texture.

Is Vegetable Pad Thai gluten free?

Yes. To keep the dish gluten-free, use a gluten-free soy sauce such as tamari for the sauce and ensure any curry or paste ingredients are labeled gluten-free. The rest of the recipe—zucchini and fresh vegetables—are naturally gluten-free.

The sauce is quick to whisk together and builds the dish’s signature sweet, salty, tangy, and spicy balance. Ingredients

Pad Thai Sauce

  • 1/4 cup gluten-free soy sauce (tamari)
  • 1 tablespoon sesame oil
  • 2 tablespoons peanut butter
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice (about 1 small lime)
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon Thai red curry paste (check label if gluten-free)

Zoodle Pad Thai

  • 1 tablespoon sesame oil
  • 1/2 cup shredded carrots
  • 1 cup broccoli florets
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup sugar snap peas
  • 4 medium zucchini, spiralized into noodles
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons scallions, chopped
  • 2 tablespoons crushed peanuts

Instructions

  1. In a medium bowl, whisk together all Pad Thai sauce ingredients until smooth. Set aside.
  2. Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat.
  3. Add the shredded carrots, broccoli, red bell pepper and sugar snap peas. Stir-fry for 5–6 minutes until the vegetables are tender-crisp.
  4. Add the spiralized zucchini noodles and cook 3–4 minutes more, tossing frequently so the zoodles warm through but don’t become soggy.
  5. Pour the prepared sauce over the vegetables and zoodles, tossing to coat evenly. Cook for another minute to warm the sauce.
  6. Remove from heat and divide between bowls. Top with chopped cilantro, scallions and crushed peanuts. Serve with lime wedges if desired.

Notes

After spiralizing, wrap the zucchini noodles in paper towels and press or squeeze to remove excess water. This helps prevent a watery sauce and keeps the dish from becoming soggy.
