Another excellent option is to skip the bun and spoon the brisket into a baked sweet potato for a hearty, satisfying meal.

  • 1 onion, sliced
  • 1/3 cup ground coffee
  • 1/3 cup brown sugar
  • 1 tbsp kosher salt
  • 1 tbsp freshly ground black pepper
  • 1 tbsp fresh rosemary, chopped
  • 2 lb beef brisket, trimmed of most excess fat
  • 2 cups beef broth
  • 1 cup stout beer, such as Guinness
  • 1/2 cup balsamic vinegar
  • 1/4 cup Worcestershire sauce
  • 6 hamburger buns, for serving (optional)

Slow Cooker Coffee Guinness Brisket Instructions

  1. Place the sliced onion in the bottom of a large slow cooker to form a flavorful bed for the brisket.
  2. In a small bowl, mix the ground coffee, brown sugar, kosher salt, black pepper, and chopped rosemary until well combined.
  3. Rub the coffee mixture all over the brisket, pressing it into the meat so it adheres and forms a crust.
  4. Lay the seasoned brisket on top of the sliced onions in the slow cooker.
  5. Pour the beef broth, stout beer, balsamic vinegar, and Worcestershire sauce around the brisket so the liquid comes up the sides but does not wash away the rub.
  6. Cover and slow cook. Cook on high for 5–6 hours, or on low for 10–12 hours, until the meat is fork-tender and pulls apart easily.
  7. Carefully remove the brisket to a cutting board and shred it with two forks. Return the shredded meat to the slow cooker and stir to coat with the cooking liquid.
  8. To serve, pile the shredded brisket onto toasted buns and offer a little of the braising liquid as au jus for dipping. Alternatively, spoon the brisket into baked sweet potatoes or serve over mashed potatoes or rice.

Tips: Trim excess surface fat before cooking, but leave a bit to keep the meat moist. If you prefer a thicker sauce, remove some of the cooking liquid, simmer it separately on the stovetop until reduced, then return it to the meat. Taste and adjust seasoning before serving; the balsamic and brown sugar balance the bitterness from the coffee and stout.
