Slow cooker method (classic, hands-off):

  1. Melt butter in a large skillet over medium-high heat. Add thinly sliced onions, season with salt, and cook about 10 minutes until softened and starting to caramelize.
  2. While the onions cook, rub all sides of the beef roast with 2 tablespoons of French onion seasoning.
  3. Transfer the cooked onions to the slow cooker. Return the skillet to the stove and sear the seasoned roast for about 2 minutes per side, until browned. Transfer the roast to the slow cooker with the onions.
  4. Add whole garlic cloves to the slow cooker.
  5. Pour in beef broth and Worcestershire sauce, stir in the remaining 2 tablespoons of French onion seasoning, and tuck bay leaves and thyme sprigs on top.
  6. Cook on high for 6 hours or low for 10–12 hours. When done, remove bay leaves and thyme stems, then shred the beef with two forks right in the cooker.

Instant Pot (pressure cooker) alternative

Use the sauté function to melt butter and cook the onions 4–5 minutes. Rub the roast with 2 tablespoons French onion mix and sear 1–2 minutes per side. Cancel sauté, add garlic, remaining French onion mix, beef broth, and Worcestershire sauce. Add bay leaves and thyme, lock the lid, and set to high pressure for 60 minutes. Let pressure release naturally for 15–20 minutes before quick-releasing any remaining pressure, then shred.

Storage & reheating

Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat gently on the stove over medium heat or microwave in short bursts until warmed through. Keep some of the cooking liquid to prevent drying when reheating.
