- Onion, minced
- Garlic cloves, minced
- Jalapeños, seeded and minced (substitute ½ cup minced green bell pepper if you prefer no heat)
- Long-grain white rice (for brown rice, increase cook time—see notes)
- Diced tomatoes with green chiles (10-ounce can)
- Chicken broth (use vegetable broth or water for a vegetarian option)
- Kosher salt, chili powder and ground cumin
- Fresh cilantro, finely chopped
- Fresh lime juice
Instructions
This Instant Pot method is intentionally simple: sauté aromatics, add rice and liquid, cook on high pressure, then finish with cilantro and lime. Step-by-step photos are shown above to guide the process.




- Sauté the aromatics. Set the Instant Pot to sauté (normal). Heat oil, then add minced onion, garlic and jalapeño. Sauté 3–4 minutes, stirring often and watching so they don’t burn. Cancel sauté when vegetables are softened.
- Add rice and liquid. Rinse the rice under cold water until the water runs mostly clear, then add it to the pot. Pour in the diced tomatoes with green chiles and the chicken broth. Season with salt, chili powder and cumin.
- Pressure cook. Secure the lid and set the steam valve to sealing. Cook on high pressure for 3 minutes. When the cook cycle finishes, allow a natural pressure release for 10 minutes, then release any remaining pressure and open the lid.
- Finish and serve. Fluff the rice with a fork, stir in chopped cilantro and fresh lime juice, and serve immediately. To keep rice warm, turn off the Instant Pot and replace the lid; it will keep rice warm for up to an hour.

Storage and reheating
Store leftover rice in an airtight container in the refrigerator for up to 6 days.
Microwave: Add 1–2 tablespoons of water or broth per serving to restore moisture. Microwave 1 minute, stir, then heat another minute if needed.
Stovetop: Reheat in a skillet with 1–2 tablespoons of liquid over medium-low heat. Cover and warm 5–10 minutes until heated through.

Instructions
- Press the sauté button on the Instant Pot and set to normal. When hot, add olive oil.
- Add minced onion, garlic and jalapeño; sauté 3–4 minutes, stirring occasionally. Press cancel or keep warm to stop sautéing.

Notes
- This recipe yields approximately 6 cups of prepared rice. One serving is about one cup.
