Mexican Street Corn is hard to beat—creamy, tangy and a little spicy, it adds incredible flavor to so many dishes.
Top flavorful turkey burgers with grilled Mexican street corn and cotija cheese, add a smear of guacamole, and you have a summer burger that’s both satisfying and bright.

For this recipe I used Jennie-O Seasoned Turkey Burger patties. These individually wrapped frozen patties are convenient, go straight from freezer to grill, and hold up well on the grill without overcooking—perfect for a quick weeknight dinner or a weekend barbecue.
While the burgers grill, you can toss together the street corn topping in minutes. The whole meal comes together in under 30–40 minutes, making it an easy option for feeding a crowd or for a simple family dinner.

Mexican Turkey Burgers Ingredients
- 2 cobs of corn
- ¼ cup sour cream
- 2 tbsp lime juice
- ½ tsp cayenne pepper (adjust to taste)
- 1 tbsp fresh cilantro, chopped
- 6 Jennie-O 1/3 lb. Seasoned Turkey Burgers (from the freezer aisle)
- ½ cup cotija cheese, crumbled
- 6 hamburger buns
- ½ cup guacamole
Preparation and Grilling Tips
Grill the corn over medium heat for 3–4 minutes per side, until it has char marks and smells toasty. Remove the cobs from the grill and, using a sharp knife, slice the kernels off the cob into a bowl.
Combine the warm corn kernels with the sour cream, lime juice, cayenne pepper and chopped cilantro. Taste and adjust the lime or cayenne to your preference. If you like the corn a little saucier, add a touch more sour cream or a splash of olive oil.
Place the turkey burgers on the grill over medium heat. If cooking from frozen, keep the heat moderate so the outside doesn’t char before the middle cooks through. Grill the patties about 9–10 minutes per side, flipping once. In the final 2–3 minutes on the grill, sprinkle each burger with cotija cheese and allow it to warm and melt slightly.
Toast the hamburger buns on the grill for 2–3 minutes until lightly browned. This adds flavor and helps the buns hold up to the juicy burger and corn topping.
Assembling the Burgers
Spread guacamole on the bottom half of each toasted bun. Top with the turkey burger, spoon a generous portion of the warm Mexican street corn mixture over the burger, then finish with the top bun. Serve immediately while warm.

Serving Suggestions, Variations and Make-Ahead Tips
- Serve with lime wedges, extra cotija and chopped cilantro on the side for guests to add as they like.
- Make it spicier by stirring a little chipotle in adobo into the guacamole or into the corn mixture.
- For a lighter version, swap Greek yogurt for some or all of the sour cream in the corn mixture.
- To prep ahead: grill the corn and mix the street corn topping ahead of time, then rewarm gently on the stove while you grill the burgers. Store leftover components separately to keep buns from getting soggy.

- During the last 2–3 minutes of grilling, top each burger with cotija cheese to warm and soften the cheese.
- Toast buns on the grill for 2–3 minutes until lightly browned.
- Warm the corn mixture briefly on the stove over medium heat for 4–5 minutes, if desired.
- Assemble: spread guacamole on bottom buns, add burger, spoon on corn mixture, then add top bun. Serve immediately.
