This Mexican Quinoa Salad is naturally gluten-free and works well for vegan or vegetarian diets, though it easily adapts for meat eaters too. It’s vibrant, nutritious, and quick to make. The ingredients deliver a balance of texture and flavor—nutty quinoa, creamy avocado, crisp peppers, and tender black beans—making it ideal for potlucks, barbecues, or meal prep.

Serve this salad either warm or chilled. Fresh lime squeezed over individual portions brightens the flavors, especially in leftovers. It also stores well for easy lunches: divide into containers for up to five days in the refrigerator, adding avocado just before serving to keep it fresh.

How to make Mexican Quinoa Salad

  1. Cook the quinoa. Combine 1 cup quinoa with 2 cups water in a medium pot. Bring to a boil, cover, reduce heat to low and simmer 15 minutes. Remove from the heat and set aside to steam and cool slightly.
  2. Sauté the vegetables. Heat 1 teaspoon olive oil in a large skillet over medium heat. Add minced red onion, minced red bell pepper, and minced jalapeño. Cook 3–4 minutes, then add minced garlic and cook another minute. Remove from heat.
  3. Make the dressing. In a large bowl, whisk together ½ cup olive oil, ¼ cup apple cider vinegar, 2 tablespoons fresh lime juice, 2 tablespoons chopped fresh cilantro, 1 teaspoon ground cumin, ¼ teaspoon kosher salt, and ½ teaspoon black pepper until combined.
  4. Toss and finish. Add the cooked vegetables to the dressing, then fold in halved cherry tomatoes, drained and rinsed black beans, and the cooked quinoa. Toss gently to combine and top with diced avocado just before serving.

How to make it spicy

If you prefer a spicier salad, try one of these simple options:

  • Add 1 teaspoon chili powder, chipotle powder, or crushed red pepper flakes to the dressing along with the cumin and salt.
  • Drizzle 2–4 tablespoons of your favorite hot sauce over the salad at serving time.
  • Add extra fresh sliced jalapeño or serrano pepper as a garnish for an immediate kick.

Optional additions of meat and cheese

If you want to add animal protein, brown 1 pound ground turkey or ground beef with the onions and bell peppers, then mix the cooked meat into the salad. Grilled chicken pieces also pair well tossed through the salad or served on top.

Seafood options like grilled shrimp or a piece of pan-seared salmon can be served on top for a heartier entrée. For those who include dairy, a sprinkle of crumbled queso fresco or cotija cheese complements the flavors nicely.

Storage and reheating

This salad is versatile: serve it warm immediately after mixing, or chill it in the refrigerator and serve cold. Both options are delicious.

For meal prep, divide the salad into four airtight containers and enjoy for lunches throughout the week. Add diced avocado just before eating to prevent browning. Stored in a sealed container, the salad stays fresh for up to 5 days.
