If you love melt-in-your-mouth Mexican shredded beef but don’t have all day to cook, this Instant Pot Beef Barbacoa recipe is your shortcut to authentic, restaurant-style flavor. Tender beef chuck roast cooks under pressure with a robust spice mix, bright lime juice, and a touch of vinegar to create a richly seasoned, juicy filling in just over an hour with only about 10 minutes of hands-on prep.

Bring the flavor to taco night!
Traditional Mexican barbacoa is slow cooked in agave or banana leaves, often in an underground pit. While that method produces incredible flavor, this Instant Pot version captures the same depth and savory richness in far less time. By searing the meat first and pressure cooking it with a homemade barbacoa seasoning, lime juice, and a splash of apple cider vinegar, you’ll get tender, deeply flavored beef perfect for tacos, burritos, bowls, and meal prep.
If you’ve ever enjoyed Chipotle’s beef barbacoa, this recipe delivers a similar bold flavor profile while being more economical and easy to make at home. One batch will typically stretch to multiple meals, making it ideal for meal planning or feeding a crowd.
This recipe is great for Taco Tuesday, weeknight dinners, or for building protein-rich bowls and loaded burritos. Prepare it once and enjoy flavorful leftovers throughout the week.

Key ingredients
The photo above shows the main ingredients to help you shop with confidence. Below are brief notes about a few important items. The full ingredient list with measurements appears in the recipe section.
- Barbacoa seasoning – a homemade blend of ground dried chiles and pantry spices such as cumin, oregano, garlic powder, ground cloves, salt, and pepper gives the barbacoa its signature depth. Making your own mix enhances flavor and is quick to prepare.
- Beef chuck roast – this well-marbled cut becomes tender and juicy when pressure cooked. You can also use a mix of chuck and short ribs or other braising cuts. For a different take, the method works with lamb or goat for a more traditional barbacoa.

Step-by-step photos are included below to guide you through the process. The recipe card later in the page lists exact measurements and timing.

Ways to serve it
The classic presentation is in soft corn or flour tortillas as tacos. Top with pickled onions, crumbled cotija or queso fresco, a drizzle of salsa macha or another favorite hot sauce, and fresh cilantro for contrast. A squeeze of lime brightens the richness of the beef.
For a heartier option, make quesadillas with Oaxaca or melty cheese and dip them into a small bowl of warm cooking liquid (consommé) for a birria-style experience. You can also build bowls with rice, beans, roasted vegetables, avocado, and shredded barbacoa for balanced meals.
Another great use is swapping the meat into burrito bowls or loaded nachos. The braising liquid can be reduced and used as a sauce for chilaquiles or to simmer tortilla chips for barbacoa chilaquiles.
Instant Pot Beef Barbacoa Tacos
Ingredients
- 2 pounds beef chuck roast, cut into large pieces
- 1/4 cup barbacoa seasoning (see notes for a homemade blend)
- 1/4 cup fresh lime juice
- 1/4 cup apple cider vinegar
- 2 cups beef broth
- 2 bay leaves
Equipment
- Instant Pot or other electric pressure cooker
Instructions
- Cut the beef into large chunks and season all over with the barbacoa seasoning.
- Select the “Sauté” setting on the Instant Pot and set to normal heat. When the insert is hot, add the beef pieces and sear on all sides, about 2–3 minutes per side, until a brown crust forms. Cancel the sauté function.
- Pour the lime juice, apple cider vinegar, and beef broth into the pot. Add the bay leaves.
- Secure the lid and set the steam valve to “Sealing.” Cook on high pressure (Manual) for 40 minutes.
- When cooking completes, allow the pressure to naturally release for 10 minutes, then carefully move the valve to “Venting” to release any remaining pressure.
- Use a slotted spoon to remove the beef to a cutting board. Shred the meat with two forks or meat claws. If desired, return shredded beef to the pot to soak briefly in the cooking liquid for extra flavor and juiciness.
- Optional: serve the shredded beef in warm tortillas topped with pickled onions, salsa, cotija cheese, and cilantro.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Reheat gently in the braising liquid on the stovetop over medium heat for 15–20 minutes, or microwave in a covered dish for 2–3 minutes. Reheating in the liquid preserves moisture.
- To reheat without the liquid, wrap shredded beef in foil and warm in a 350°F oven for 10–15 minutes to prevent drying.
- This recipe is naturally gluten free when served in corn tortillas or over rice.
- Make extra barbacoa seasoning and store it in a jar for quick future meals.
