What you’ll need
- Red potatoes – or Yukon Gold. Avoid Russets, which are too starchy and have thicker skins that change the texture.
- Eggs – optional hard-boiled eggs give classic potato salad flavor and extra protein.
- Sour cream – used in place of mayonnaise for a tangy, creamy dressing that pairs well with cheddar.
- Ranch seasoning – use a store-bought packet or your favorite homemade ranch seasoning for convenience and flavor.
- Sharp cheddar cheese – shredded sharp cheddar adds richness and a buttery, tangy bite.
- Green onions – thinly sliced for color and mild onion flavor.
- Celery – chopped for crunch and fresh texture.
- Salt and pepper – to taste.

Tips and tricks
- Make ahead: This potato salad improves after a few hours in the fridge and can be made up to 2 days in advance.
- Storage: Keeps well refrigerated for up to 5 days. Do not freeze.
- Peeling: You don’t need to peel red potatoes; the skins are thin and add texture. Peel if you prefer.
- Yield: Recipe makes about 10 cups. For a BBQ with many sides, plan 1/2 cup per person; for fewer sides, plan 1 cup per person.
- Scaling: Easily double or halve the recipe. Cooking time in the Instant Pot remains the same.
Optional additions
This salad is delicious as written, but you can customize it with one or more of these add-ins:
- Jalapeño: Finely minced for a spicy kick.
- Parsley: 2–4 tablespoons of chopped fresh parsley for brightness.
- Bacon: 1/2 cup cooked, crumbled bacon for smoky crunch.
- Ham: Diced ham adds savory protein that pairs well with cheddar.
