Can you cook frozen meat in an Instant Pot?

Yes. You can cook frozen meat in an Instant Pot, but for this recipe the marinade needs time to work. If your steak is frozen when you begin, refrigerate and marinate it for about 8 hours so it thaws and absorbs the flavors. Marinating frozen meat for a much shorter time won’t allow the meat to thaw enough to soak in the marinade.

Ingredients

Instant Pot Italian Beef

  • 1 lb top sirloin steak
  • 2 tbsp olive oil (for marinade)
  • 2 tbsp balsamic vinegar
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 3 cloves garlic, crushed
  • 2 tbsp fresh basil, chopped
  • 1 tbsp olive oil (for searing)

Tomato Basil Bruschetta

  • 3 Roma tomatoes, chopped
  • ¼ cup red onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp parmesan cheese, grated (optional topping)

Instructions

Instant Pot Italian Beef

  1. Combine the sirloin, 2 tbsp olive oil, balsamic vinegar, sea salt, black pepper, crushed garlic and chopped basil in a large resealable bag or container. Marinate in the refrigerator for at least 1 hour, up to 8 hours.
  2. When ready to cook, set the Instant Pot to the Sauté function on the normal setting. Add 1 tbsp olive oil.
  3. When the pot is hot, remove the steak from the marinade and sear 1–2 minutes per side until browned. Press Cancel or Keep Warm to stop sautéing.
  4. Place the lid on the Instant Pot, secure the steam release to Sealing, select Manual (or Pressure Cook) on High, and set the timer for 10 minutes.
  5. When the cooking cycle finishes, turn the Instant Pot off and let it sit for 5–10 minutes, then carefully release any remaining pressure and open the lid.
  6. Remove the sirloin and let it rest for 5–10 minutes before slicing thinly against the grain.

Tomato Basil Bruschetta

  1. While the steak cooks, combine the chopped tomatoes, red onion, minced garlic, chopped basil, extra virgin olive oil, balsamic vinegar, salt and pepper in a medium bowl. Taste and adjust seasoning as needed.
  2. Spoon the bruschetta over the sliced sirloin and sprinkle with grated Parmesan if desired. Serve immediately over zucchini noodles, pasta, or with a side salad.

Tips

  • For best texture, slice the steak after it has rested; this helps retain juices.
  • If your steak is thicker or a larger roast, increase pressure time and allow a longer natural release—adjustments will vary by cut and size.
