Between birthdays, finals and holiday parties, my kitchen had been neglected for a couple of weeks. When I finally cleared off the counter and turned on the stove, I wanted something bold and flavorful but simple enough for a weeknight. With a bag of pita bread and a few pounds of chicken in the fridge, I combined my recent craving for Indian and Thai spices with pantry staples and created these Indian Chicken Curry Pitas.

Ingredients

  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, chopped
  • 3 tbsp curry powder
  • 1 tsp bay leaves
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • ½ tsp chili powder
  • ½ tsp red pepper flakes
  • 1 tomato, pureed
  • 1 cup sour cream (or Mexican crema)
  • ¾ cup coconut milk
  • 4 chicken breasts, thinly sliced
  • 4 pita breads
  • 1 tsp fresh mint, for garnish
  • 1 tsp fresh chives, chopped, for garnish
  • 1 lime, sliced, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced bell pepper and onion and sauté for 5–7 minutes, until they begin to soften. Add the minced garlic and cook for another minute until fragrant.
  2. In a small spice grinder or mortar and pestle, combine the ginger, curry powder, bay leaves, coriander, cumin, paprika, chili powder and red pepper flakes. Grind or blend until well combined and aromatic.
  3. Add the spice mixture to the skillet with the peppers, onions and garlic. Stir to coat the vegetables and toast the spices lightly for 1–2 minutes to deepen the flavors.
  4. Pour in the pureed tomato, sour cream (or Mexican crema) and coconut milk. Stir until the sauce is smooth and evenly combined. The sour cream adds a tangy creaminess; if you prefer, plain yogurt can be used instead.
  5. Add the thinly sliced chicken breasts to the skillet, pressing them into the sauce so they are submerged. Cover the skillet, reduce the heat to low, and simmer for 20–25 minutes, or until the chicken is cooked through and tender. Stir occasionally so the sauce cooks evenly and the spices meld together.
  6. Once the chicken is fully cooked, taste the sauce and adjust seasoning if needed—add a pinch more chili flakes for extra heat or a squeeze of lime for brightness.
  7. Warm the pita breads briefly in a dry skillet or oven. Spoon the curry and chicken mixture into each pita, then garnish with chopped mint and chives. Serve immediately with lime wedges to squeeze over the pitas.

This dish delivers vibrant curry flavor with a gentle kick from the chili powder and red pepper flakes.
