Now I always keep a container of crispy quinoa in the fridge. It’s easy to make, stores well, and gives salads and bowls a delightful crunch without the heaviness of croutons. Ingredients
- 2 cups cooked quinoa
- 1 tablespoon extra virgin olive oil
- 1 tablespoon seasoning (use a spice blend to suit your dish)
Instructions
- Start with cooked, cooled quinoa. Leftover quinoa works well—chill it in the fridge if possible so it flakes more easily.
- Preheat the oven to 425°F (220°C).
- In a bowl, toss the quinoa with the olive oil and your chosen seasoning until evenly coated. Spread the quinoa into a thin, even layer on a parchment-lined rimmed baking sheet.
- Roast in the preheated oven for 20 minutes, stirring or tossing with a spatula halfway through, until the quinoa is dry, golden, and crisp. Watch closely near the end so the quinoa browns but does not burn.
- Allow to cool completely on the pan—the quinoa will crisp up further as it cools. Once cool, break up any clusters and store in an airtight container.
