Berry Almond Granola Bars

Recently I was invited to demonstrate heart-healthy dishes on San Diego 6 News. I wanted to showcase recipes that are simple, flavorful, and wholesome. Alongside a veggie burger recipe and a fruit smoothie, I premiered these easy Heart Healthy Oatmeal Berry Granola Bars. They’re naturally gluten free when made with certified gluten-free oats and are a convenient, nutritious option for busy mornings or afternoon snacks.

Heart Healthy Granola Bar Ingredients

Ingredients

  • 2 cups oats (use certified gluten-free oats if needed)
  • 1 cup almonds (whole or slivered)
  • ¼ cup flax seed
  • 1 cup dried blueberries
  • 1 cup dried cranberries
  • 1 teaspoon olive oil
  • ½ cup honey

Instructions

  • Preheat the oven to 350°F (175°C).
  • Add all ingredients to a food processor and pulse until the mixture is evenly combined and sticky. You want a mix that holds together without being over-pureed—small bits of nuts and berries add texture.
  • Line a baking sheet or 9×13-inch pan with parchment paper and spread the mixture into an even layer, pressing gently to compact it so the bars hold their shape after baking.
  • Bake for about 20 minutes, until the edges are lightly golden and the mixture feels set.
  • Remove from the oven and allow to cool briefly. While still warm, slice into bars or use cookie cutters to make fun shapes. Once fully cooled, the bars will firm up and hold together well.

Recipe Notes and Tips

These granola bars are intentionally simple, relying on wholesome ingredients. If you prefer a chewier bar, reduce baking time by a few minutes; for crisper bars, bake a little longer—but watch carefully so they don’t burn. Pressing the mixture firmly into the pan before baking helps the bars hold together once cooled.

Substitutions and variations:

  • Swap almonds for walnuts, pecans, or sunflower seeds for a different flavor and texture.
  • Use a combination of dried fruits—cherries, raisins, or chopped apricots work well.
  • Replace honey with maple syrup for a slightly different taste and to keep the recipe vegan-friendly (note: texture may vary).
  • Add a teaspoon of cinnamon or a pinch of sea salt to enhance flavor.

Serving and Storage

These bars are great with yogurt, a piece of fruit, or wrapped for lunchboxes and travel snacks. Store cooled bars in an airtight container at room temperature for several days, or refrigerate to extend freshness. For longer storage, freeze the bars separated by parchment paper and thaw at room temperature when ready to eat.
