Gluten Free Stuffing Instructions

- Preheat the oven to 350°F (175°C).
- Slice the gluten free white bread into cubes. Arrange the cubes in a single layer on one or two baking sheets and toast in the oven for 8–10 minutes until slightly crisp. Remove and set aside.
- In a large pot over medium heat, melt the butter. Add the diced sweet potatoes, chopped celery and diced onion. Sauté for 4–5 minutes until the vegetables begin to soften.
- Add the minced garlic, dried sage, dried thyme, salt and pepper. Sauté for another 1–2 minutes to bloom the spices, then pour in 1 cup of the broth.
- Bring the mixture to a gentle boil and cook until the sweet potatoes are just tender, about 6–8 minutes.
- Cut the cornbread into cubes and add them to the pot along with the toasted bread cubes.
- Pour in the remaining broth and add the whisked eggs. Gently toss everything together so the bread soaks up the liquid and the ingredients are evenly combined.
- Transfer the stuffing mixture to a roasting pan or baking dish and spread it evenly. Bake in the preheated oven for 45–55 minutes, until the top is golden and the center is set.
- Let the stuffing rest 5–10 minutes before serving. This helps it hold together and makes portioning easier.

- Make the cornbread and toast the bread cubes a day or two ahead to save time on the holiday.
