I often double the batch and freeze half: frozen meatballs can go straight into the air fryer and finish in about 10 minutes, making them a simple foundation for weeknight dinners, sandwiches, or soups.
What makes these meatballs the best
- Italian pork sausage. Using a mix of ground beef and Italian pork sausage adds extra fat and seasoning, resulting in juicier, more flavorful meatballs than using only ground beef.
- Homemade Italian seasoning. A simple blend of dried basil, oregano, thyme, and other herbs brightens the meatballs. Store-bought works fine, but homemade is easy and fresh-tasting.
- Egg yolks as the binder. Using only yolks (rather than whole eggs) helps bind the mixture while contributing richness and avoiding excess moisture.

- Cook the aromatics. Heat the olive oil in a large skillet over medium-high heat. Sauté the diced onion for 4–5 minutes until softened, then add the garlic and cook 1 more minute. Remove from heat and let cool slightly.
- Combine the meat mixture. In a large bowl, mix the ground beef, Italian sausage (removed from its casing if necessary), panko, grated Parmesan, egg yolks, Italian seasoning, salt, and pepper. Fold in the cooked onions and garlic.
- Form meatballs. Gently mix until just combined—avoid over-mixing. Shape into approximately 40 golf ball–sized meatballs (use a cookie scoop for uniform sizes).
- Air fry. Arrange meatballs in a single layer in the air fryer basket with space between each. Cook at 380°F (about 193°C) for 8 minutes. Depending on your air fryer size, you may need 2–3 batches. No flipping is required since hot air circulates around the meatballs.
- Finish and serve. Remove meatballs and toss with warm marinara, add to soup, pile into rolls for subs, or let cool and freeze for later use.

Storing and freezing meatballs

To freeze raw meatballs: Arrange on a parchment-lined baking sheet about 1/2 inch apart and freeze for 30 minutes. Once the outsides are firm, transfer to a freezer bag to prevent sticking.
To freeze cooked meatballs: Cool completely, then place in a freezer-safe bag. Label with the date. Frozen meatballs last up to 6 months.
Cooking from frozen: Cook uncooked meatballs directly from frozen in the air fryer at 380°F for about 10 minutes. To thaw first, move them from freezer to refrigerator 12–24 hours before cooking. If already fully cooked, reheat in sauce or soup until warmed through.
Recipe tips
- Do not over-mix. Mix only until the ingredients are combined to avoid dense, tough meatballs.
- Make even-sized meatballs. Use a cookie scoop for uniform size so they cook evenly. Lightly spray the scoop with cooking spray to prevent sticking.
