Ingredients

  • 1/2 eggplant, sliced
  • 2 portobello mushrooms, stem removed and cleaned
  • 1/2 loaf ciabatta bread
  • 4 ounces goat cheese (or cream cheese)
  • 4 tablespoons pistachio kale pesto (see pesto recipe below)
  • 4 large basil leaves
  • 4 ounces fresh mozzarella, sliced

  6. Add the roasted red pepper slices over the eggplant.
  7. Top the peppers with sliced fresh mozzarella.
  8. Close each sandwich and press in a panini press or on a heated indoor grill until the bread is crisp and the cheese is melted, about 4 to 6 minutes.
  9. Remove from the press, let rest for a minute, then slice and serve hot.
