  • Olive oil – divided for searing and sautéing.
  • Onion – 1 cup, diced.
  • Carrots – 1 cup, peeled and diced.
  • Celery – 1 cup, diced.
  • Garlic – 3 cloves, minced.
  • All-purpose flour – 1/4 cup, to thicken the sauce.
  • Beef broth – about 2 cups (use a good-quality stock for best flavor).
  • Tomato paste – 2 tablespoons, for umami and richness.
  • Worcestershire sauce – 1 tablespoon (soy sauce can be substituted).

Instructions

Prepare the beef filling

  1. Preheat oven to 350°F and place a rack in the lower third.
  2. Toss cubed beef with the pot roast seasoning. Heat 2 tablespoons olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, 4–6 minutes. Remove and set aside.
  3. Add remaining oil to the pot, then sauté onions, carrots and celery for about 5 minutes. Add garlic and cook 1 minute more. Pour 1/4 cup beef broth into the pot and scrape any browned bits to deglaze.
  4. Sprinkle flour over the vegetables and cook 1 minute to remove the raw flour taste.
  5. Add remaining beef broth, tomato paste and Worcestershire sauce. Bring to a boil over high heat.
  6. Return the seared beef to the pot, add thyme sprigs and bay leaves. Cover and transfer to the oven. Braise at 350°F for 90 minutes, until beef is very tender.

Assemble and bake the pot pie

  1. When the filling has about 30 minutes left, remove puff pastry from the freezer to thaw on the counter.
  2. After braising, remove the pot from the oven. Discard bay leaves and thyme stems, then stir in frozen peas.
  3. Increase oven temperature to 400°F. On a lightly floured surface, roll one sheet of pastry to slightly larger than 8×8 inches and press it into an 8×8-inch baking dish. Trim edges, prick the bottom and sides with a fork, cover with foil and bake for 25 minutes. Remove foil.
  4. Spoon the hot beef filling into the pre-baked bottom crust.
  5. Roll the second pastry sheet to fit and lay it over the filling. Trim excess, cut a few ventilation slits and brush the top with the egg wash.
  6. Bake at 400°F for about 35 minutes, or until the crust is deep golden. If edges brown too quickly, tent them with foil for the remaining bake time. Let rest 10 minutes before serving.

Recipe tips

  • Save the foil from pre-baking the bottom crust. Cut a square from the center and use the remaining rim to shield edges if they brown too quickly.
  • Watch the last 10–15 minutes of baking. Puff pastry can go from golden to too dark quickly; tent edges if needed.
  • Bake on the lower rack. This helps the filling heat evenly and promotes a crisp, golden bottom crust.
  • Thaw puff pastry fully before using. Working with partially frozen pastry leads to tears and uneven baking. If short on time, place the sheet on a lightly floured board near a warm appliance to speed thawing.

Make-ahead & freezer tips
