This Chicken Wing Seasoning is a versatile dry rub that elevates wings no matter how you cook them. Whether smoked, grilled, baked, or air-fried, this blend adds bold, smoky, and spicy flavor. It comes together in about 5 minutes using just six pantry staples.

Bring flavor to chicken wings (and more)
Meet the simple secret to better wings: a smoky, slightly spicy dry rub made from six common spices. This seasoning delivers great depth of flavor on wings and works well on other chicken cuts and a variety of recipes.
Want to boost the flavor of mac and cheese or a cheesy chicken dip? Use a sprinkle of this blend. It also seasons grilled or Instant Pot chicken, rotisserie birds, and shredded chicken dishes beautifully.
Make a batch and store it in an airtight container in the pantry for up to six months so it’s ready whenever you want to add bold flavor.

Ingredients
Below are the ingredients that make this seasoning work and some substitution notes. For exact measurements, see the recipe card further down.
- Chili powder
- Smoked paprika – gives the blend its smoky character. If you prefer no smoke, use regular paprika instead.
- Garlic powder (or granulated garlic) – granulated garlic is coarser and less likely to clump over time, but either works.
- Onion powder (or granulated onion) – granulated onion is coarser and resists clumping better, but regular onion powder is fine too.
- Sea salt (or kosher salt) – kosher or sea salt are preferred for their texture and flavor compared with table salt.
- Cayenne pepper – provides the heat. Adjust the amount to taste for mild, medium, or spicy results.
Instructions
- Combine all ingredients in a small bowl or mason jar and stir or shake until evenly mixed.
- Store the seasoning in an airtight container in the pantry for up to six months.
That’s it — in about five minutes you’ll have a flavorful dry rub ready to use on wings and many other dishes.

Ways to use it
This seasoning is extremely versatile. Use it as a dry rub or mix it into recipes that need a smoky, savory boost.
- Baked chicken wings – toss wings with olive oil and about 1 tablespoon of seasoning per pound. Bake on a wire rack at 425°F for 40 minutes or until cooked through. Serve as-is or toss with your favorite sauce.
- Baked chicken breasts – pound breasts to an even thickness, brush with oil, rub with seasoning (about 1 tablespoon per pound) and roast at 425°F for roughly 20 minutes or until 165°F internal temperature.
- Instant Pot shredded chicken – replace the usual seasoning with this blend before pressure cooking to give shredded chicken tacos, dips, and salads extra flavor.
- Rotisserie or roasted chicken – rub the whole chicken with oil and seasoning, roast at 425°F for about 70–80 minutes, basting with pan juices if desired.
- Slow cooker chicken – coat 2 pounds of chicken with 2 tablespoons of the blend, add 1 cup chicken broth and cook on low 7–8 hours or high 4–5 hours for tender, shreddable chicken.
- Fried chicken – add 2–3 teaspoons of the seasoning to your flour mixture for a flavorful crust. Use as you would any breading for frying.
- Air fryer wings – dry-rub wings with the seasoning and air fry for crispy, flavorful results. Serve with ranch, blue cheese, or buffalo sauce.
- Sous vide wings – season before cooking sous vide and finish crisping in an air fryer or oven.
- Works with buffalo sauce – the smoky-spicy rub pairs well with buffalo sauce in dips, sandwiches, meatballs, and more.
Use one tablespoon of seasoning per pound of wings as a starting guideline. Feel free to adjust depending on how bold you like your seasoning.
