Instead of the garlic-and-herb version, I developed a recipe that pairs warm, caramelized Bartlett pears with melty brie and a touch of honey. This recipe works well for holiday gatherings, game-day parties, brunch, or any occasion where you want an impressive yet unfussy dish. The sourdough round becomes a warm, edible serving bowl and the torn bread cubes double as the perfect vehicle for scooping up the cheesy pear mixture.

Ingredients
- 4 tbsp butter
- 2 Bartlett pears, cored and thinly sliced
- 2 tbsp brown sugar
- 1 round sourdough bread loaf (about 8–10 inches)
- 1 round (7 oz) Brie cheese
- 2 tbsp honey

Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium-high heat, melt the butter. Add the sliced pears and brown sugar, stirring to coat. Cook for 10–12 minutes, or until the pears begin to caramelize and become tender.
- While the pears caramelize, slice off the top ½ inch from the sourdough round. Reserve this piece for serving.
- Carefully cut a circle from the center of the loaf, leaving about 1 inch of bread around the bottom and sides so the loaf remains a sturdy bowl. Be careful not to cut through the bottom.
- Place the Brie round inside the hollowed loaf. Spoon the warm, caramelized pears over the Brie, then drizzle the honey evenly on top.
- Place the filled bread bowl on a baking sheet and cover with the reserved top slice of bread.
- Bake for 20–25 minutes, until the Brie is soft and melty inside but not completely collapsed.
- Remove from the oven. Slice the top piece of bread into cubes for dipping and cut slits every inch around the edge of the bread bowl to make pulling pieces off easy.
- Serve immediately with the bread cubes for dipping into the warm, gooey Brie and caramelized pears.

- If your pears are very ripe and soft, reduce the cooking time slightly so they don’t break down completely while caramelizing.
- For extra texture, sprinkle toasted pecans or walnuts over the pears before baking.
