Burritos
- 1 cup french fries (hot and crispy)
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1 cup guacamole
- 1 cup pico de gallo
Instructions
Make the carne asada
- Rub the steak with olive oil and coat all sides with the carne asada seasoning. If time allows, marinate up to 8 hours for extra flavor.
- Preheat a grill over high heat (or heat a cast-iron skillet on the stove if you don’t have a grill).
- Cook the steak 3–5 minutes per side, depending on thickness and cut, until the internal temperature reaches about 135°F for medium-rare. Skirt steak cooks faster than flank.
- Remove from heat, tent with foil, and let rest 10 minutes before slicing and dicing.
Prepare the fillings
- Cook frozen fries in an air fryer or oven until golden and crispy.
- Prepare guacamole and pico de gallo if making from scratch; otherwise use prepared versions.
Assemble the burritos
- Sprinkle about 1/4 cup shredded cheddar into a large skillet over medium-high heat and cook until the cheese crisps, about 3–4 minutes. Place a tortilla on top of the crisped cheese and press; flip so the cheese is on the tortilla.
- Layer each tortilla with 1/4 cup guacamole, 1/4 cup pico de gallo, 1/4 cup hot fries, and about 1/4 pound diced carne asada. Top with 1/4 cup shredded cheddar.
- Fold the ends over the filling and roll tightly. Repeat to make 4 burritos.
