Instructions
Short Ribs
- Preheat the oven to 350°F (175°C).
- Rub the short ribs all over with the steak seasoning.
- Heat the olive oil in a large dutch oven over medium-high heat. Sear the short ribs on all sides until browned.
- Pour in the beef broth and scrape up any browned bits from the pan. Add Worcestershire sauce, bay leaves, and thyme. Cover and transfer to the oven. Braise for about 3 hours, until the meat is very tender.
- Remove the pot from the oven. Take the short ribs out of the braising liquid and shred the meat using two forks. Strain the remaining liquid through a fine-mesh strainer, discard solids, and measure out 2 cups of the strained broth for the filling.
Caramelized Onions and Filling
- About 1 1/2 hours into the ribs braising, melt the butter in a large pot or dutch oven over medium-high heat. Add the diced onions and spread them evenly in the pan.
- Cook for 5 minutes, sprinkle with salt, then reduce heat to medium. Cook the onions for about 90 minutes, stirring every 15 minutes until deeply caramelized.
- Stir in the minced garlic and cook one minute. Add 1/4 cup of the reserved beef broth to deglaze the pot, scraping any browned bits from the bottom.
- Sprinkle the flour evenly over the onions, stir, and cook for one minute. Add the remaining 1 3/4 cups of reserved beef broth and the shredded short ribs. Bring to a boil over high heat, then simmer until most of the liquid has cooked away, about 5–7 minutes. Remove from heat and let cool.
Assemble and Bake the Pot Pie
- Preheat the oven to 400°F (200°C).
- On a lightly floured surface, roll one sheet of thawed puff pastry into a 12-inch square. Press it into an 8″ x 8″ casserole dish, trim any excess, and prick the bottom and sides with a fork.
- Cover the dough with aluminum foil and par-bake the bottom crust for 25 minutes. Remove the foil.
