Last year I first tried King’s Hawaiian Jalapeño Rolls in a Roasted Jalapeño Honey Carne Asada Slider recipe, and ever since I’ve been hooked on their sweet-and-spicy flavor. When I learned the rolls are now available in stores nationwide, I grabbed a couple of bags—one to snack on and one to build a new recipe around.

For this version I combined two of my favorite party foods: the classic jalapeño popper and a juicy grilled slider. Imagine warm cream cheese mixed with smoky roasted jalapeños and crunchy bacon tucked inside a small beef patty, melted cheddar crowning the top, all served on a soft King’s Hawaiian Jalapeño Roll. These Jalapeño Popper Stuffed Sliders are bold, satisfying, and easy to make for a crowd.

Ingredients

  • 6 slices bacon, cooked and crumbled
  • 2 jalapeños, roasted, peeled, de-seeded and diced
  • 8 oz cream cheese, softened
  • 2 lbs ground beef
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 cup cheddar cheese, shredded
  • 12 King’s Hawaiian Jalapeño Rolls

Instructions

  1. Cook the bacon: Fry or bake the bacon until crisp, then drain and crumble. Set aside.
  2. Roast the jalapeños: Place whole jalapeños under a broiler or directly on a hot grill until the skins are blackened and blistered. Transfer them to a sealed plastic bag for 3–5 minutes to steam, which loosens the skin. Remove, peel off the skin, discard stems and seeds, and dice the peppers.
  3. Make the filling: In a medium bowl, combine the softened cream cheese, crumbled bacon and diced roasted jalapeños until evenly mixed.
  4. Form the sliders: In a large bowl, season the ground beef with salt and pepper. Divide the meat into 12 equal portions and flatten each into a small patty. Press a small well or indentation into the center of each patty to hold the filling.
  5. Stuff the patties: Spoon the cream cheese, bacon and jalapeño mixture into each well. Carefully wrap the beef around the filling to seal it, smoothing seams so the filling stays enclosed while cooking.
  6. Grill: Place the stuffed sliders on a preheated grill over medium heat and cook 5–7 minutes per side, or until the beef reaches your desired doneness. Add shredded cheddar to the top during the last minute of cooking to melt.
  7. Assemble and serve: Place each finished slider on a King’s Hawaiian Jalapeño Roll and serve warm.

Tips & Variations

  • For milder heat, remove all seeds and membranes from the jalapeños. For more heat, leave some seeds or use serrano peppers instead.

  • If you prefer, bake the sliders on a sheet pan at 400°F (204°C) for 12–15 minutes, turning once, until the burgers reach the desired doneness.
