  1. Preheat the oven to 400°F (200°C).
  2. Prepare the bottom crust: On a lightly floured surface, unfold one sheet of thawed puff pastry and roll it to roughly a 12-inch square. Press it gently into an 8 x 8-inch square casserole dish, trim any excess, and prick the bottom and sides with a fork.
  3. Blind-bake the bottom crust: Cover the pastry with a piece of aluminum foil and bake for 25 minutes. Remove the foil and set the parbaked crust aside while you make the filling.
