  • 1 tablespoon cornstarch
  • 14 ounce can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • ¼ teaspoon sea salt
  • 2 cups heavy cream, cold
  • ½ cup dark chocolate chunks, or chocolate chips

Instructions

  1. Drain any liquid from the can of cherries.
  2. Place the drained cherries in a medium saucepan over medium heat.
  3. Add the sugar and cornstarch to the cherries and stir to combine.
  4. When the mixture begins to bubble, reduce the heat slightly and cook for about 5 more minutes until it thickens.
  5. Use the back of a spoon to smash some cherries while leaving others whole to create texture in the swirl.
  6. Remove the cherries from heat and cool while you prepare the ice cream base.
  7. In a medium bowl, whisk together the sweetened condensed milk, vanilla extract, and sea salt.
  8. Whip the cold heavy cream with a mixer on medium-high until firm peaks form, about 4–5 minutes.
  9. Gently fold the condensed milk mixture into the whipped cream until combined.
  10. Stir in the dark chocolate chunks, then lightly swirl in the cooled cooked cherries.

  • Smoother texture: If you prefer no chunks, puree the cooked cherries before folding them into the ice cream base.
  • Faster freezing: Pouring the mixture into a metal container and placing it toward the back of the freezer will speed up freezing.
  • Yield: This recipe makes about 1/2 gallon of ice cream (approximately 4 pints or 12 scoops).
  • Storage: Store tightly sealed in the freezer to avoid freezer burn. Homemade ice cream keeps well for up to 6 months when properly sealed.
