Ingredients
- 1 loaf Italian or French bread, cubed
- 2 tablespoons olive oil
- 4 cups cherry tomatoes, halved
- ½ cup red onion, thinly sliced
- 1 cup artichoke hearts
- 2 tablespoons balsamic vinegar
- ½ cup olive oil
- ¼ cup fresh basil, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup parmesan cheese, grated
Instructions

Preheat the oven to 400°F (200°C).

Spread the cubed bread on a baking sheet and drizzle with 2 tablespoons of olive oil. Bake for 10–12 minutes, or until the bread is golden and crisp on the edges. Remove and let cool slightly.

While the bread toasts, combine the halved cherry tomatoes, sliced red onion, artichoke hearts, balsamic vinegar, ½ cup olive oil, chopped basil, salt and pepper in a large bowl. Stir gently to coat the vegetables in the dressing.

Add the toasted bread to the bowl with the vegetables and toss thoroughly so the bread soaks up the dressing and tomato juices. Adjust seasoning to taste.

Just before serving, sprinkle the grated parmesan over the top. Serve immediately or let sit 20–30 minutes to allow flavors to meld—the bread will soften slightly as it absorbs the dressing.

- Stale Bread: If you already have stale bread, simply cube it and skip the toasting step. After tossing with the dressing and tomatoes, allow the salad to rest 20–30 minutes so the bread can absorb the dressing and tomato juices for the classic panzanella texture.
- Artichoke Hearts: Use jarred or canned artichoke hearts, marinated or plain. Be sure to drain them well before adding to the salad to avoid excess liquid.
- Tomato Options: If you don’t have cherry tomatoes, substitute halved grape tomatoes, diced roma or heirloom tomatoes. Choose ripe, flavorful tomatoes for the best results.
