This Birria Ramen is a delicious fusion of bold Mexican flavors and slurp-worthy ramen. Tender, slow-braised birria beef and richly spiced birria broth are combined with instant ramen noodles for an easy weeknight bowl that tastes like it came from a food truck. Once you have birria prepared, this ramen comes together in about 10 minutes — perfect for using leftovers and elevating your ramen night.

The first time many people discover birria ramen is at a street-food vendor or food truck where rich, chile-forward consommé meets tender braised meat and noodles. Homemade birria — made with beef, goat, or lamb marinated in dried chiles, tomatoes, spices and vinegar, then slow-braised until fall-apart tender — creates an intensely flavored broth that makes an unforgettable ramen base.
When I make a large pot of my tested birria, I keep the shredded meat separate from the consommé so I can transform leftovers into new meals all week long. Birria ramen is one of my favorite quick conversions: the deep, tangy broth cooks the noodles and warms the shredded beef in minutes, and vibrant toppings finish the bowl.

Ingredients
For the best result, prepare birria ahead of time. The recipe below uses already-prepared birria broth and shredded birria beef. If you don’t have birria on hand, you can make a shortcut version with a birria seasoning blend and a chuck roast, or use store-bought beef broth as a base in a pinch.
- Prepared birria broth – about 8 cups. The deeply flavored consommé is the foundation of the ramen.
- Ramen noodles – 12 ounces of instant ramen noodles (four 3-ounce packages). Discard seasoning packets and use only the noodles.
- Shredded birria beef – about 2 cups. Keep the meat separate from the broth until you’re ready to combine.
Optional toppings (see below) add freshness, crunch and heat.
Topping options
- Sliced jalapeños – raw for a bright, spicy bite.
- Diced red onions – add crunch and sharpness that contrasts the rich broth.
- Fresh cilantro – chopped, for herbal brightness.
- Lime wedges – squeeze over the bowl for acidity that lifts the flavors.
- Crunchy chili sauce or crunchy chile oil – use sparingly for texture and an extra hit of spice.
- Soft or medium boiled eggs – optional for a comforting, ramen-style addition (6 minutes for runny yolks, 8 minutes for medium).
Instructions
After you have birria prepared and cooled, making the ramen is quick and straightforward. These steps assume your birria consommé and shredded beef are ready to use.
- Pour 8 cups of prepared birria broth into a large pot and bring to a rolling boil over high heat.
- When the broth is boiling, add 12 ounces of instant ramen noodles. Cook the noodles for approximately 3 minutes, or according to the package if using a different variety.
- Add about 2 cups of shredded birria beef to the pot. Stir gently to combine and heat the meat through for 1 to 2 minutes so it warms without overcooking.
- Ladle the ramen, broth and beef into bowls. Top with diced red onion, sliced jalapeños, cilantro, a squeeze of lime and any other preferred toppings. Serve immediately and enjoy.

Notes & Tips
- Make ahead: Birria can be prepared up to five days in advance and stored in the refrigerator. Keep the shredded meat and broth separate until ready to make ramen.
- Shortage of broth: If you don’t have the full amount of birria consommé, top up with good-quality beef broth to reach 8 cups.
- Gluten-free option: Use certified gluten-free ramen noodles or rice noodles. The birria recipe itself can be made without gluten when you avoid soy-based additives.
- Adjust spice: Spice level depends on your birria. Add extra arbol chiles or crushed red pepper for more heat, or omit hotter chiles for a milder bowl.
- Leftovers: Store leftover birria ramen in an airtight container in the refrigerator for up to five days. Reheat gently on the stove over medium heat for 5–8 minutes or microwave in a covered, microwave-safe bowl until hot.
- Eggs: A soft-boiled egg is optional and adds richness, but the bowl is delicious without it.
Serving & Variations
This birria ramen is a great base to customize: switch to shredded chicken birria for a lighter version, fold in roasted vegetables for extra texture, or serve with tortillas on the side to mop up the broth. For a more authentic ramen feel, garnish with scallions and a soft-boiled egg. For an even deeper flavor profile, briefly simmer the shredded meat in the consommé before adding the noodles so the beef absorbs more broth.
