Pumpkin spice is typically a mix of cinnamon, nutmeg, allspice, ginger and cloves. I use a homemade pumpkin pie spice blend for the brightest flavor, but store-bought mixes work well too. The spice blend is used in many seasonal treats; in these cookies it provides the signature fall flavor even though there’s no pumpkin puree in the dough.

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 teaspoons pumpkin pie spice (homemade or store-bought)
- 3/4 cup unsalted butter, melted
- 1 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 egg
- 1 egg yolk
- 12 ounces white chocolate chips (or a mix—see variations)
How to make them
- Preheat the oven to 325°F (163°C).
- Whisk together the flour, salt, baking powder and pumpkin pie spice in a medium bowl; set aside.
- In a large bowl, mix the melted butter with the brown sugar and granulated sugar until smooth.
- Add the vanilla, the whole egg and the additional egg yolk. Stir until combined—an electric mixer can be used if you prefer.
- Fold the dry ingredients into the wet mixture until the dough comes together.
- Stir the white chocolate chips into the dough by hand so they’re evenly distributed.
- Form 18 rounded balls of dough and place them on a parchment-lined baking sheet or baking stone, spacing them evenly.
- Bake 15–18 minutes, until the edges are set but the centers remain soft. Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Chocolate chip variations
White chocolate chips pair beautifully with pumpkin pie spices, but you can substitute semi-sweet chocolate chips if you prefer a deeper chocolate note. You may also omit chips entirely for a simple, soft pumpkin spice cookie.
Some bakers have experimented with seasonal specialty chips. If you find pumpkin spice-flavored chips, try using a half-and-half mix of white chocolate and pumpkin spice chips so the spice doesn’t become overwhelming.
