Serve with warm tortillas or rice bowls and your favorite toppings for a fast weeknight meal or a casual weekend gathering.

Why you’ll love these shrimp fajitas
Fajitas are a go-to dinner at our house because they’re fast, flavorful, and endlessly customizable. This shrimp version is especially quick and bright: a short marinade with lime and a robust fajita spice blend gives the shrimp big flavor without any fuss. While peppers and onions are softening on the stove, the shrimp take on those same zesty flavors and develop a nice sear for a slightly charred, juicy bite.
What makes this recipe great is the balance of speed and texture. The shrimp only need a couple of minutes per side, and the vegetables cook until tender but still slightly crisp. You can make the spice mix from pantry staples (cumin, paprika, chili powder, garlic powder, salt) or use your favorite store-bought blend. The whole meal comes together in one skillet in under 30 minutes, perfect for busy nights or casual entertaining.

Ingredients
Below are the ingredients that produce the best texture and flavor for these shrimp fajitas. Exact measurements and the full recipe are in the recipe card further down the page.
- Shrimp – Large shrimp (31-40 count per pound) work well here because they’re bite-sized but substantial. You can use medium or jumbo if you prefer; avoid very small shrimp, which can overcook, and extra-jumbo, which may be awkward to eat in a fajita.
- Bell peppers – Use a mix of colors for visual appeal and flavor contrast. Red and green are classic, but orange or yellow peppers are great too.
- Red onion – Sliced thin to cook evenly with the peppers.
- Olive oil – Or another neutral oil like avocado or vegetable oil for sautéing.
- Fajita seasoning – A simple homemade blend (cumin, paprika, chili powder, garlic powder, salt) boosts the shrimp and vegetables. A store-bought packet also works if you’re short on time.
- Lime juice – Fresh lime juice brightens the dish; squeeze on extra before serving if you like.
Instructions
These step-by-step instructions will get you from prep to plate quickly. Photos below illustrate each major stage: marinated shrimp, softened peppers and onions, and the finished skillet.

- Marinate the shrimp. Pat the shrimp dry so the marinade clings. In a large bowl, toss shrimp with 1 tablespoon olive oil, 1 tablespoon fresh lime juice, and the fajita seasoning. Let the shrimp rest while you prep the vegetables—this short marinating step adds plenty of flavor.
- Slice and sauté the vegetables. Cut bell peppers and red onion into 3–4 inch strips. Heat 1 tablespoon olive oil in a large skillet over medium-high heat (cast iron is ideal if you have one). When the oil shimmers, add peppers and onions and cook 10–12 minutes, stirring occasionally, until softened and slightly caramelized. Transfer to a plate.
- Sear the shrimp. Return the skillet to medium-high heat and add the marinated shrimp. Cook about 2 minutes per side until pink and opaque. Push the shrimp to one side of the pan.
- Combine and finish. Add the peppers and onions back to the skillet, squeeze the remaining tablespoon of lime juice over everything, and toss to combine. Remove from heat and serve immediately.

- 1 pound large shrimp, peeled and deveined, tails removed
- 2 tablespoons olive oil, divided
- 3 tablespoons fajita seasoning (homemade or store-bought)
- 2 tablespoons lime juice, divided
- 2 bell peppers, thinly sliced
- 1 red onion, thinly sliced
For serving (optional)
- 8 tortillas (corn or flour)
- ¼ cup fresh cilantro, chopped
- 1 avocado, thinly sliced
Instructions
- Add the shrimp to a large bowl with 1 tablespoon olive oil, 1 tablespoon lime juice, and 3 tablespoons fajita seasoning. Set aside to marinate while you prepare the vegetables.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- When the oil is hot, add the sliced bell peppers and onions and cook 10–12 minutes, stirring occasionally, until softened and lightly browned. Transfer to a plate.
- Add the marinated shrimp to the skillet and cook 2 minutes per side until pink and cooked through. Push the cooked shrimp to one side of the skillet.
- Return the peppers and onions to the skillet, add the remaining tablespoon of lime juice, and toss to combine. Serve in warm tortillas topped with chopped cilantro and avocado slices.
Notes
- Thawing: If using frozen shrimp, thaw completely under cold running water in a colander, then pat dry before marinating.
- Grilling option: You can grill the shrimp and vegetables instead. Skewer the shrimp to prevent them from falling through the grates and use a grill basket or foil “basket” for the peppers and onions. Grill over medium heat until lightly charred.
- Gluten-free: Serve in corn tortillas or over rice to keep the recipe gluten-free. The homemade fajita seasoning is gluten-free; check labels if using a packaged mix.
