Sriracha pizza sauce, jalapeños, summer sausage and jalapeño cheddar cheese top these irresistible mini pizzas—perfect for game day, parties, or a casual weeknight dinner.

December was always my favorite month growing up: it’s my birthday month, there’s the holiday buzz, and of course the Hickory Farms stand in the mall. The familiar flavors of beef summer sausage, cheese balls and crackers made simple lunches feel like a treat. That nostalgic love for those flavors is what inspired this modern, shareable version — Spicy Sausage Mini Pizzas — made with Hickory Farms Signature Beef Summer Sausage and jalapeño cheddar cheese.

This recipe turns those classic party ingredients into bite-sized pizzas that are easy to prepare and endlessly customizable. Each mini pizza is a canvas: spread Sriracha pizza sauce for a tangy heat, add chopped summer sausage for savory bite, layer on sliced jalapeños and red onion for brightness, then top with shredded jalapeño & cheddar cheese for creamy, spicy finish.

Spicy Sausage Mini Pizza Ingredients
- 16 oz pizza dough
- 1 cup Sriracha pizza sauce (use your favorite Sriracha-based pizza or pizza sauce)
- 1 cup Hickory Farms Beef Summer Sausage, chopped
- 2 large jalapeños, thinly sliced (seeds removed if you prefer less heat)
- 1 cup red onion, thinly sliced
- 2 cups Hickory Farms Jalapeño & Cheddar Cheese, shredded
Spicy Sausage Mini Pizza Instructions
- Preheat the oven to 400°F (200°C). Arrange a rack in the middle of the oven and line a baking sheet with parchment paper or a light dusting of flour to prevent sticking.
- On a lightly floured surface, roll the pizza dough to about 1/2 inch thick. Use a 3-inch round pastry cutter (or a drinking glass) to cut out 8 mini pizza rounds. If needed, use a rolling pin to gently stretch each round so it’s even and slightly larger.
- Spread roughly 2 tablespoons of Sriracha pizza sauce on each dough round, leaving a small border around the edge for a crisp rim.
- Top each mini pizza with chopped summer sausage, a few slices of jalapeño, and some thin red onion. Distribute the toppings evenly so every bite has a balance of flavors.
- Place the baking sheet in the oven and bake for 20 minutes, or until the crust is set and just starting to turn golden.
- Remove the tray from the oven and evenly sprinkle the shredded jalapeño & cheddar cheese over each mini pizza. Return the pizzas to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbling.
- Let the mini pizzas cool for a minute or two, then transfer to a serving platter. Serve warm.

Tips for Success
- For milder heat, remove jalapeño seeds and membranes before slicing. For extra kick, keep them in or use pickled jalapeños.
- If you don’t have a pastry cutter, a small bowl or cup works well to cut uniform rounds.
- To speed up prep, slice toppings ahead of time and store them in airtight containers in the refrigerator until ready to assemble.
- Watch baking times closely if you make the rounds thinner or thicker than suggested; thinner crusts will cook faster.
Variations and Serving Ideas
- Extra cheesy: add a blend of mozzarella with the jalapeño cheddar for a milder, gooey finish.
- Extra meaty: double the summer sausage or add cooked Italian sausage crumbles.
- Vegetarian option: swap the sausage for roasted mushrooms or seasoned plant-based crumbles.
- Finish with fresh herbs: a sprinkle of chopped cilantro or parsley brightens the spicy flavors just before serving.
Make-Ahead, Storage & Reheating
Assemble the mini pizzas and keep them uncooked on a parchment-lined tray covered tightly in the refrigerator for up to 24 hours. Bake as directed when ready. Leftovers will keep in an airtight container in the refrigerator for 2–3 days. Reheat in a 350°F (175°C) oven for 8–10 minutes or until warmed through; a toaster oven works well to keep the crust crisp.
