This recipe is generous; the casserole is often listed as serving four, but it’s the kind of dish that disappears quickly—if you’re feeding hungry adults, expect smaller portions or consider doubling if you want leftovers.

Ingredients
- 1 package (17.3 oz) puff pastry, 2 sheets (thawed)
- ¼ cup butter
- 1 cup carrots, peeled and chopped
- 1 cup onions, chopped
- 1 cup celery, chopped
- 1 cup red bell pepper, chopped
- 3 cloves garlic, minced
- ⅓ cup all-purpose flour
- 2 cups chicken broth
- 1 tbsp Old Bay seasoning
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp cayenne pepper
- ½ tsp red pepper flakes
- ½ tsp kosher salt
- ½ tsp ground black pepper
- 1 lb boneless, skinless chicken breasts, cooked and shredded (pre-cooked shredded chicken or an Instant Pot shredded chicken method works perfectly)
- 1 tbsp Louisiana-style hot sauce
- 1 cup frozen peas, thawed
- ¼ cup fresh parsley, chopped (divided)
- 1 egg + 1 tbsp water, whisked (for egg wash)
Step by step instructions
- Preheat the oven to 400°F (204°C).
- Unfold one puff pastry sheet on a lightly floured surface. Roll into a 12-inch square and press it into an 8″ x 8″ square casserole dish, trimming the excess. Prick the base thoroughly with a fork, cover with aluminum foil and bake for 25 minutes. Remove the foil and set aside.
- While the pastry bakes, melt the butter in a large skillet or Dutch oven over medium heat. Add the carrots, onions, celery and red bell pepper and cook 5–6 minutes until slightly softened.
- Add the garlic and cook 1 more minute. Sprinkle in the flour and cook, stirring, 1–2 minutes until the flour turns lightly golden.
- Slowly whisk in the chicken broth, bring the mixture to a boil, and continue stirring until it thickens into a gravy-like sauce.
- Stir in Old Bay seasoning, oregano, thyme, cayenne, red pepper flakes, kosher salt and black pepper. Taste and adjust seasoning as needed.
- Add the shredded chicken, hot sauce, peas and 3 tablespoons of chopped parsley. Stir to combine, then remove from heat.
- Spoon the chicken filling into the pre-baked puff pastry-lined casserole dish.
- Unfold the remaining puff pastry on a floured surface and cut into six equal strips. Weave the strips into a lattice or arrange as you prefer over the filling. Trim any excess pastry.
- Mix the egg and water to make an egg wash and brush it over the pastry. Sprinkle the remaining parsley over the top.
- Bake 40–45 minutes, or until the pastry is golden brown and the filling is bubbling at the edges. Let rest a few minutes before serving.

Serving tip: this pot pie pairs well with a simple green salad or roasted vegetables to balance the richness. Leftovers keep well in the refrigerator for 2–3 days and reheat nicely in a 350°F oven until warmed through to preserve the crust’s texture.
