I love a good tomato basil bruschetta—what began as a classic Italian appetizer has become one of my go-to toppings for so many meals. When piled over perfectly roasted salmon with a simple balsamic glaze, it transforms weeknight dinner into something special without a lot of effort. Make a big batch of the bruschetta and use it all week on salads, chicken, or fish.

This baked salmon is a crowd-pleaser—even picky seafood eaters tend to love it. The tangy balsamic glaze balances the rich salmon while the fresh tomato mixture adds brightness and texture. Because it takes under 30 minutes from start to finish, it’s ideal for busy evenings when you want a healthy, satisfying dinner with minimal fuss.

Instructions

  1. Prepare the balsamic glaze. In a small saucepan over medium-high heat, warm the olive oil and sauté the minced garlic for about 1 minute. Add the balsamic vinegar, salt, and pepper, then simmer gently for 5 minutes until slightly reduced and glossy. Remove from heat and stir in the chopped fresh basil.
  2. Bake the salmon. Preheat the oven to 400°F (200°C). Place two 6-ounce salmon fillets skin-side down on a rimmed baking sheet lined with parchment paper or foil. Brush or spoon the balsamic glaze evenly over each fillet. Bake for about 15 minutes, or until the salmon flakes easily with a fork but is still moist.
  3. Make the tomato basil bruschetta. While the salmon bakes, combine diced Roma tomatoes, diced red onion, minced garlic, chopped fresh basil, extra virgin olive oil, balsamic vinegar, salt, and pepper in a bowl. Stir gently to combine and let the flavors mingle.
  4. Serve immediately. Remove salmon from the oven and place each fillet on a plate. Spoon a generous portion of the tomato basil bruschetta over the top of each piece and serve right away.

How to add vegetables

This meal pairs well with roasted or baked vegetables that cook in the same time and temperature as the salmon. Toss broccoli or cauliflower florets, sliced zucchini or summer squash, or asparagus with a drizzle of olive oil, salt, and pepper. Arrange the vegetables on the same baking sheet around the salmon or on a separate sheet and roast at 400°F for about 15 minutes. This keeps cleanup simple and gives you a complete, balanced plate in under 30 minutes.

If you prefer a finished vegetable with extra flavor, try roasting broccolini with garlic and Parmesan or seasoning asparagus with lemon zest and a pinch of red pepper flakes just before serving.

  • 1/4 teaspoon black pepper

Tomato Basil Bruschetta

  1. While the salmon roasts, combine all bruschetta ingredients in a bowl and stir to combine.
  2. When salmon is done, top each fillet with the bruschetta and serve immediately.

Notes

  • Add vegetables: Roast broccoli, cauliflower, sliced zucchini, summer squash, or asparagus alongside the salmon. Toss vegetables with olive oil, salt, and pepper and bake at the same temperature for about 15 minutes.
  • Easy cleanup: Lining the baking sheet with parchment paper or nonstick foil makes cleanup faster and helps prevent the salmon skin from sticking.
  • Storage: Store leftover salmon and bruschetta separately in airtight containers in the refrigerator for up to 2 days. Reheat the salmon gently in a low oven to avoid drying it out; add fresh bruschetta only after reheating.

Tips & Serving Suggestions

Serve Bruschetta Baked Salmon with a simple green salad, garlic roasted potatoes, or a bed of sautéed greens. A squeeze of lemon brightens the dish and complements the balsamic glaze. For a lighter plate, pair with a quinoa pilaf or cauliflower rice. This recipe adapts well to larger portions—simply multiply ingredients and bake salmon until it reaches the desired doneness.
