Chai Spiced Butternut Squash Soup - vegan and gluten free, made in under 45 minutes

As the weather cools and we reach for cozy meals, a bowl of chai-spiced butternut squash soup hits the spot. Roasting the squash and aromatics concentrates their sweetness and flavor, while steeped chai tea adds warm spices like cinnamon, cardamom and ginger without overpowering the dish. Using unsweetened plain almond milk creates a silky texture without dairy, keeping the recipe vegan and lighter than cream-based soups.

Roasted butternut squash and onions seasoned on a foil-lined baking sheet

Ingredients

  • 2 pounds butternut squash – peeled and cubed (or use pre-cut or frozen cubes)
  • 1 cup onion, large dice
  • 1 tablespoon fresh ginger, minced
  • 4 garlic cloves, smashed or minced
  • 1/4 cup coconut oil (or other neutral cooking oil)
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt (adjust to taste)
  • 1 teaspoon black pepper
  • 3 cups water
  • 2 chai spice tea bags
  • 1 cup plain almond milk (unsweetened)

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, toss the cubed butternut squash, diced onion, minced ginger and garlic with the coconut oil, chopped rosemary, ground cinnamon, salt and black pepper until evenly coated.
  • Spread the seasoned vegetables in a single layer on a foil-lined baking sheet.
  • Roast for 15–20 minutes, stirring once if needed, until the squash is fork-tender and beginning to caramelize.
  • While the squash roasts, bring 3 cups of water to a boil in a small pot. Remove from heat, add the chai tea bags and steep for 3–5 minutes. Discard the tea bags and set the spiced tea aside.
  • When the squash is done, transfer it to a large blender or food processor. Pour in the chai tea and the almond milk.
  • Blend until completely smooth and creamy. If your blender is small, blend in batches to avoid overfilling.
  • Taste and adjust seasoning with additional salt or pepper if needed. Serve warm in bowls, garnished with a small sprig of rosemary, a drizzle of almond milk or a pinch of cinnamon if desired.

Tips and tricks

  • Make it year-round: If fresh butternut squash isn’t available, frozen pre-cut squash works well. Keep an eye on cooking time since frozen pieces may roast faster or release extra moisture.
  • Adjust the spice level: Use milder or stronger chai tea bags depending on how pronounced you want the chai flavor. Add a pinch of nutmeg or a clove for extra warmth.
  • Storage: Refrigerate chilled soup in an airtight container for up to 7 days.
  • Freezing: Freeze in freezer-safe containers or bags, leaving room for expansion. The soup will keep well for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Reheating: Warm gently on the stovetop over medium heat, stirring frequently, until heated through (5–10 minutes). You can also microwave individual portions for 2–3 minutes, stirring halfway.
  • Dietary notes: The recipe is naturally gluten-free and vegan. To keep it compliant with specific plans like Whole30, use a compliant almond milk.
  • Serving suggestions: This soup pairs nicely with crusty bread, a simple green salad, or a sprinkle of toasted pumpkin seeds for texture.
