I’m excited to share this first cooking post on the blog: a creamy, risotto-style orzo with roasted vegetables. I like to experiment at lunchtime for two reasons: I rarely plan what I’ll eat because each day is different, and I usually cook just for myself—so it’s the ideal moment to try something new without pressure. When a simple inspiration strikes, I use what’s already in my kitchen and pull together a satisfying meal.

This morning I caught a lemon risotto segment on a 30-minute cooking show and was inspired to create my own version. In my pantry I found a bag of orzo and decided to make a risotto-style orzo with roasted vegetables—creamy, comforting, and quick. If you haven’t cooked with orzo before, it behaves much like rice in risotto, absorbing stock and becoming silky when cooked slowly with stirring.

Ingredients (serves 2 as a main, 4 as a side)
- 2 red onions (1 chopped, 1 sliced)
- 1 eggplant
- 1 red bell pepper, quartered
- 1 green bell pepper, quartered
- 2 tbsp olive oil, divided
- 1 tsp kosher salt
- 1 tsp black pepper
- 6 garlic cloves (2 minced, 4 left whole for roasting)
- 2 cups orzo
- 4 cups chicken stock (or vegetable stock for vegetarian)
- 1/2 cup freshly grated Parmesan
- 1/4 cup fresh basil, chopped
Start by prepping the vegetables: slice one red onion, quarter both bell peppers, and halve the eggplant. Place the vegetables and the 4 whole garlic cloves on a baking sheet. Drizzle with 1 tablespoon olive oil and season with salt and pepper.

Roast the vegetables at 350°F (175°C) for about 30 minutes, until tender and caramelized, while you prepare the orzo on the stovetop.
Bring 4 cups of stock to a gentle boil in a saucepan. In a large skillet or sauté pan, heat the remaining 1 tablespoon of olive oil over medium heat and add the chopped onion and the minced garlic. Cook 1–2 minutes until fragrant and slightly softened.

Add the orzo and toast it in the pan for about a minute. Then, add the hot stock in 1/2-cup increments, stirring and allowing the orzo to absorb the liquid before adding more. Keep repeating until the orzo is tender and creamy—this usually takes about 12–15 minutes. Stir frequently to encourage a risotto-like creaminess.

When the orzo is tender and most of the stock is absorbed, stir in the Parmesan until it melts into the pasta, creating a silky texture. Taste and adjust seasoning with a little more salt and pepper if needed.
Remove the roasted vegetables from the oven. Chop the peppers, sliced onion, and the now-soft roasted garlic. Scoop the roasted flesh from the eggplant and roughly chop or mash it—this adds a lovely creamy body and smoky flavor to the dish. Fold the vegetables and the chopped basil into the finished orzo and combine gently.


This creamy orzo with roasted vegetables works well as a satisfying vegetarian main, or as a flavorful side. It pairs especially nicely with breaded chicken or pork dishes if you want a heartier plate. If you prefer the vegetarian version, use vegetable stock and omit the Parmesan or substitute with a vegetarian hard cheese.

Leftovers keep well in the refrigerator for 2–3 days. Reheat gently with a splash of stock or water to restore creaminess. The combination of tender, roasted vegetables and creamy, Parmesan-stirred orzo makes this dish comforting and versatile—easy enough for a weekday lunch, pretty enough for guests.
