Inspired by that experience, I developed this version at home using techniques I lean on for other savory spreads—slow caramelization, a balance of sweet and tangy, and a hint of miso for extra umami. The result is a deeply flavorful jam that works as a centerpiece for snacks or as a finishing touch on hearty mains.
My version borrows ideas from a popular bacon jam recipe I make, but swaps pork for mushrooms and adds white miso paste to amplify the savory notes. The jam is excellent spooned over whipped goat cheese, piled onto a burger with melted Swiss or gruyère, or used as a steak topper. It stores well in the refrigerator, so you can make it ahead and reach for it whenever you want a quick gourmet upgrade.

- White miso paste – Also called shiro miso, this variety is the mildest and slightly sweet, which blends seamlessly into the jam without overpowering it. If you don’t have white miso, substitute ½ tablespoon soy sauce for a similar salty, umami boost, though the flavor will be slightly different.

Ingredients
- 3 tablespoons olive oil
- 1 cup yellow onion, diced
- 1 pound baby bella (cremini) mushrooms, diced
- 3 garlic cloves, minced
- ¼ cup maple syrup
- ½ cup brown sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon white miso paste
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the diced onions and cook, stirring occasionally, until deeply caramelized, about 15 minutes.
- Add the mushrooms and garlic. Sauté until the mushrooms begin to release their liquid and “sweat,” about 8–10 minutes. Continue cooking for 2–3 more minutes after the liquid appears.
- Stir in the maple syrup, brown sugar, and apple cider vinegar. Cook until the mixture thickens and most of the liquid has evaporated, about 5–7 minutes.
- Remove from heat and stir in the white miso paste. Cook for another 1–2 minutes to meld the flavors. Taste and add salt if needed.
- Let the jam cool, then transfer to an airtight container. Store in the refrigerator for up to 7 days.
Notes
- If you prefer a smoother, less chunky texture, pulse the cooled jam a few times in a food processor—leave some texture for the best mouthfeel.
- To make a spicy version, stir in 1 teaspoon red pepper flakes or crushed Aleppo pepper with the miso.
- The jam can be served cold or gently warmed. Microwave for 60–90 seconds or heat in a small skillet over medium heat for 4–5 minutes before serving.
