Slow Cooker Pot Roast Instructions

  1. Place the diced onion, sweet potatoes, carrots and beets in the base of a large slow cooker in an even layer.
  2. In a small bowl, whisk together the balsamic vinegar and olive oil. Stir in the chopped rosemary, thyme, steak seasoning and crushed garlic.
  3. Brush or rub this herb-garlic mixture all over the beef chuck so it’s evenly coated.
  4. Heat a large heavy pot or a cast-iron skillet over medium heat. Add the chopped bacon and cook until crisp. Use a slotted spoon to transfer the bacon to a paper towel-lined plate and set aside.
