- 2 tbsp fresh lime juice
- 8 oz canned diced green chilies
- ¼ cup fresh cilantro
- 1 tsp ground cumin
- 1 tsp salt
- 1 tsp crushed red pepper

Instructions — Shells and Filling
- Preheat the oven to 350°F (175°C).
- Cook the ground beef in a skillet over medium heat until browned. Drain excess grease, then stir in the taco seasoning.
- Add the drained black beans and ¼ cup water or chicken broth to the seasoned beef. Stir to combine, cover, and simmer on low for about 15 minutes to let the flavors meld.
- While the beef simmers, bring a large pot of salted water to a boil. Add the jumbo shells and cook for 10–12 minutes, or just shy of al dente so they hold their shape when baked. Drain and set aside to cool slightly.
- When the seasoned beef mixture is ready, transfer it to a large bowl and stir in 1 cup of the shredded cheddar.
- Spoon the beef-and-bean filling into each shell and arrange the filled shells, opening-side up, in a single layer in an oven-safe baking dish.

Instructions — Creamy Green Chili Sauce
- Heat the olive oil in a small skillet over medium heat. Add the minced garlic, chopped red onion, jalapeño and serrano. Sauté for 5–7 minutes until softened and fragrant.
- Transfer the sautéed mixture to a blender or food processor. Add the chicken broth, sour cream, avocado, lime juice, diced green chilies, cilantro, cumin, salt and crushed red pepper.
- Blend until completely smooth and creamy. Taste and adjust seasoning if needed.
- Pour about half of the sauce into the bottom of the baking dish to create a flavorful base. Place the filled shells on top, then pour the remaining sauce over the shells so each one is well coated.
- Sprinkle the remaining ½ cup of shredded cheddar evenly over the top.
- Bake in the preheated oven for 25–30 minutes, or until the cheese is melted and bubbly and the dish is heated through.

Finishing and Serving
Allow the baked shells to rest for 5 minutes before serving. Garnish with extra cilantro, a squeeze of lime, or diced avocado if desired. These stuffed shells pair well with a simple green salad, cilantro-lime rice, or warm tortillas for scooping.
