Dairy Free Gluten Free Chocolate Cake
This nut-, egg-, dairy- and gluten-free chocolate cake is an ideal birthday cake for kids and adults living with multiple food allergies.

I made this cake for a friend’s daughter who celebrated her 7th birthday with us. Because her little brother is allergic to nuts, eggs and dairy, I wanted to bake something everyone could safely enjoy. The result was a simple, chocolatey layer cake that’s free of the most common allergens but still moist and delicious.

I adapted the recipe from a “Lighter Chocolate Cake” I found while flipping through my Martha Stewart’s Cakes cookbook. I was given that cookbook during a visit to Martha Stewart Headquarters in New York, and after spotting the original cake recipe I knew it would be a perfect base for an allergy-friendly version.

For this version I made three key changes: I removed eggs and dairy, made the cake gluten-free, and replaced canola oil with olive oil. The result is a deep chocolate cake that’s safe for many common allergies but still full of flavor.

Dairy Free Gluten Free Chocolate Cake Ingredients
- 1 cup warm water
- ½ cup unsweetened cocoa powder
- 1½ cups gluten-free all-purpose flour blend (use your preferred blend)
- 1 cup granulated sugar
- ¾ tsp baking soda
- ½ tsp salt
- ½ cup olive oil (plus 1 tsp for brushing the pan)
- 1 tbsp vanilla extract
- 2 tsp distilled white vinegar
Chocolate Glaze Ingredients
- 2 oz dark chocolate, finely chopped (ensure the brand is dairy-free)
- ½ cup confectioners’ sugar, sifted
- 2 tbsp water

Instructions
- Preheat the oven to 375°F (190°C).
- Brush an 8-inch round cake pan with 1 tsp of olive oil and set aside.
- In a small bowl, whisk together the warm water and the unsweetened cocoa powder until smooth and well dissolved.
- In a large mixing bowl, combine the gluten-free flour blend, granulated sugar, baking soda and salt.
- Make a well in the center of the dry ingredients. Pour in the cocoa mixture, the olive oil and the vanilla extract.
- Whisk everything together until the batter is smooth and uniform. Stir in the distilled white vinegar at the end — it will react with the baking soda and help the cake rise.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Oven times vary, so check a few minutes early if your oven runs hot.
- Remove the cake from the oven and allow it to cool in the pan for about 20 minutes. Transfer to a wire rack if desired to cool further before glazing.
- While the cake is baking, prepare the chocolate glaze: set the chopped dark chocolate in a heatproof bowl over a pan of simmering water (double boiler). Stir the chocolate constantly until it melts and is smooth.
- In a separate medium bowl, whisk the sifted confectioners’ sugar with 2 tablespoons of water until smooth and lump-free. Add the melted chocolate and whisk until the glaze is glossy and uniform. If the glaze is too thick, add a little more water, ¼ teaspoon at a time, until it reaches a spreadable consistency.
- Once the cake has cooled for at least 20 minutes, spread the glaze evenly over the top. Allow the glaze to set for a few minutes before slicing.

Finish the cake with simple decorations — I added a few sparkler candles for the birthday celebration — and serve. This cake is delightfully dense and fudgy; one friend called it a “Texas Brownie Cake,” which simply means it’s rich and very satisfying.

Serve warm or at room temperature. Leftovers keep well covered at room temperature for a day or two, or refrigerated for up to five days. Bring refrigerated cake to room temperature before serving for the best texture and flavor.
