It was a great chance to meet the team, sample products, and share this super-simple taco recipe with thousands of attendees. This recipe is designed to be low-effort and high-flavor. A small spice rub on the chicken and a simple lime-cumin dressing provide depth without many ingredients. Ingredients

Slow Cooker Chicken Tacos

  • 1 tsp ground cumin
  • 1 tsp Litehouse Instantly Fresh Cilantro (or 1 tsp dried cilantro)
  • 1 tsp kosher salt
  • 1 lb boneless, skinless chicken breast
  • 8 small corn tortillas

Lime Cumin Dressing

  • ½ cup olive oil
  • ¼ cup lime juice, freshly squeezed
  • ¼ cup rice vinegar
  • 1 tsp ground cumin
  • ½ tsp salt
  • 1 clove garlic, crushed

Instructions

  1. In a small bowl, combine 1 tsp ground cumin, 1 tsp cilantro, and 1 tsp kosher salt. Rub this blend evenly over the chicken breast.
  2. Place the seasoned chicken in the slow cooker.
  3. Whisk together the lime cumin dressing ingredients: ½ cup olive oil, ¼ cup freshly squeezed lime juice, ¼ cup rice vinegar, 1 tsp ground cumin, ½ tsp salt, and 1 crushed garlic clove. Pour the dressing over the chicken, making sure the breasts are well coated.
  4. Cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken to a cutting board or bowl, shred with two forks, then return the shredded chicken to the slow cooker and toss with the remaining sauce so the meat soaks up the flavors.
  6. Warm the corn tortillas and serve the shredded chicken on each tortilla. Top with avocado, fresh cilantro, sliced jalapeños, grated cheese, or other favorite garnishes.
