The method is straightforward: use extra-firm tofu, remove excess moisture, crumble and season it, sauté with onions and salsa, then broil to get a golden, crisp exterior. Serve with warm corn tortillas and your favorite garnishes for a quick, flavorful meal.

Ingredients

  • Extra-firm tofu – Use tofu labeled extra-firm to ensure a crumbly, holdable texture.
  • Garlic – Fresh minced garlic gives the best flavor.
  • Ground cumin, salt and pepper – Basic seasonings to build flavor.
  • Mexican oregano – If you don’t have Mexican oregano, regular dried oregano works as a substitute.
  • Chipotle chilies in adobo sauce – These canned chilies add smokiness and heat; use 2–3 chopped chilies and a couple tablespoons of adobo sauce for depth.
  • Olive oil – Or another neutral oil such as avocado or canola.
  • Yellow onion – Diced; a mild cooking onion is best.
  • Red salsa – Use a traditional red salsa (mild, medium, or hot depending on your spice preference).
  • Corn tortillas – For serving the tacos.

  1. Prepare and season the tofu. Drain the extra-firm tofu and gently press with paper towels to remove excess liquid. Crumble the tofu with your hands or a potato masher so it has a coarse texture, not a paste. In a large bowl combine the crumbled tofu with minced garlic, ground cumin, dried oregano, salt, pepper, chopped chipotle peppers and adobo sauce; toss to coat evenly.
  2. Sauté the aromatics and tofu. Heat the oil in a large, oven-safe skillet over medium-high heat. Sauté the diced onion for 3–4 minutes until soft. Add the seasoned tofu and cook for about 6 minutes, stirring occasionally so it browns evenly. Stir in the salsa and cook another 1–2 minutes until warmed through. Spread the mixture into an even layer in the skillet.
  3. Broil to crisp. Position a rack in the upper third of the oven and set the broiler to high. Place the skillet under the broiler for 4 minutes, then remove, stir the tofu, and broil another 4 minutes. This short broiling step creates the crisp edges that make the filling satisfying.
  4. Warm the tortillas and assemble. Wrap tortillas in damp paper towels and microwave for 30 seconds to soften, or warm them on a dry skillet. Fill each tortilla with tofu crumbles and add desired toppings.

  • Sliced avocado
  • Vegan chipotle sauce – a creamy cashew-based sauce is especially good on these tacos

  • Diced tomatoes
  • Black beans (drained and rinsed)
  • Pico de gallo, guacamole, or your favorite salsas

Recipe notes

  • Extra crispy tofu: If you prefer a crunchier texture, increase broiling time by about 4 minutes total — broil 6 minutes, stir, then broil another 6 minutes while watching closely so it doesn’t burn.
  • No oven-safe skillet? Spread the cooked tofu on a rimmed baking sheet lined with parchment or foil and broil it that way.
  • Make ahead: The tofu crumbles keep well in an airtight container in the fridge for up to a week. Reheat in a hot skillet for 3–5 minutes to restore crispness before serving.
  • Adjust the heat: This recipe is medium-spicy. Use more chipotle peppers and hot salsa to increase heat, or reduce to one pepper and mild salsa to tame it.
  • Gluten-free: Use certified gluten-free salsa and corn tortillas to keep the recipe gluten-free.

  • 14 ounces extra-firm tofu
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano (Mexican oregano if available)
  • ½ teaspoon salt
  • 2 chipotle chilies in adobo, chopped
  • 2 tablespoons adobo sauce (from the can)
  • 2 tablespoons olive oil
  • 1 cup diced yellow onion
  • ½ cup medium red salsa

For The Tacos

  • 12 corn tortillas
  • ¼ cup fresh cilantro leaves
  • 1 avocado, thinly sliced
  • ¼ cup vegan chipotle sauce (optional)

Instructions

Prepare the Tofu Taco Crumbles

  1. Drain and press the tofu, then crumble it into a bowl.
  2. Toss the crumbles with garlic, cumin, pepper, oregano, salt, chopped chipotles and adobo sauce until well coated.
  3. Preheat the broiler and place a rack in the upper third of the oven.
  4. Heat oil in an oven-safe skillet over medium-high heat and sauté the onion for 3–4 minutes.
  5. Add the seasoned tofu and cook for 6 minutes, then stir in the salsa and cook 1–2 more minutes.
  6. Spread tofu in an even layer and broil 4 minutes, stir, then broil another 4 minutes until crispy.

Assemble the tacos

  1. Warm the tortillas by wrapping them in damp paper towels and microwaving 30 seconds or warming on a skillet.
  2. Fill each tortilla with tofu crumbles and top as desired.

Notes

  • If you want extra crispiness, extend broiling to 6 minutes, stir, then broil another 6 minutes while watching closely.
  • If your skillet isn’t broiler-safe, transfer the tofu to a rimmed baking sheet lined with parchment or foil before broiling.
  • Store cooked tofu crumbles in an airtight container in the refrigerator up to one week; reheat in a skillet for 3–5 minutes to revive crispness.
