Creamy Rotel Cheese Dip with Tomatoes and Chiles

When I moved to California I had to explain Rotel to friends who’d never seen it: it’s simply diced tomatoes with green chiles, sold canned. As a kid my family made Velveeta-and-Rotel queso all the time, and for parties we often added seasoned ground beef. The result is a timeless, easy appetizer that’s always a hit.

This particular version uses only four ingredients and comes together in about 15 minutes. It’s ideal for game days, potlucks, or casual get-togethers. Serve warm with tortilla chips, corn chips, or raw veggies.

Ingredients

  • 1 pound ground beef – For variations you can try pork sausage or chorizo. Ground beef is the classic choice and keeps the flavor familiar and satisfying.
  • Taco seasoning (about 2 tablespoons) – Use a store-bought packet or a homemade taco seasoning blend. Homemade seasoning lets you control the salt and heat.
  • 16 ounces Velveeta – Cubed. Velveeta melts smoothly for a silky queso texture. If you prefer, you can substitute 8 ounces cream cheese plus 8 ounces shredded cheddar (see notes).
  • 10 ounces Rotel – Do not drain. The juices from the tomatoes and chiles help thin and flavor the dip.

Instructions

  1. Brown the beef. Heat a large skillet over medium-high. Add the ground beef, break it up, and cook until no longer pink, about 5–7 minutes. Drain excess grease, then return the skillet to medium heat.
  2. Combine and melt. Add the taco seasoning, the entire can of Rotel (liquid included), and the cubed Velveeta. Stir constantly over medium heat until the cheese has fully melted and the mixture is smooth and creamy.

Serve the dip immediately in a bowl garnished with fresh cilantro if you like. For parties, transfer the dip to a slow cooker set to warm so it stays at serving temperature for hours. Offer tortilla chips, corn chips, or fresh vegetables for dipping.

  • Makes about 5 cups of dip. This is an approximate yield; adjust quantities to suit your crowd.
  • Gluten free option: Use a gluten-free taco seasoning and serve with gluten-free chips or vegetables.
  • Meatless version: Omit the ground beef and use just Velveeta and Rotel for a classic two-ingredient queso, or add taco seasoning to boost flavor. For a vegetarian substitute, try soy chorizo.
  • To increase heat: Use a hot Rotel variety made with habaneros or add extra diced chiles.
  • Velveeta alternatives: If you prefer not to use Velveeta, substitute 8 ounces cream cheese plus 8 ounces shredded cheddar; the texture will be slightly different but still delicious.

Storage and reheating

Store leftover dip in an airtight container in the refrigerator for up to 6 days. Reheat gently on the stove, in a slow cooker, or in the microwave.

For small portions, reheat in the microwave for about 90 seconds, stirring halfway through. For larger quantities, warm in a small pot over medium heat, stirring until hot. For party rewarming, place the chilled dip into a slow cooker on low for 30 minutes, then switch to warm to keep it at serving temperature.

Do not freeze this dip if it contains Velveeta; freezing alters the texture and quality.
