I perfected my classic homemade meatball recipe over time to create tender, juicy meatballs with bold flavor. This slow cooker version keeps that same satisfying texture and boosts convenience: the sauce and meatballs simmer together until everything is perfectly infused with garlic, herbs and tomatoes. For best results, I recommend a quick five-minute broil on the meatballs before adding them to the slow cooker to help them hold their shape. The broil step is optional but prevents the meatballs from sticking together or falling apart during a long, gentle simmer.

Why you’ll fall in love with this recipe

  • Minimal active time: Prep is quick and most of the cooking happens unattended in the slow cooker.
  • Big, comforting flavor: The marinara and meatballs develop deep flavor as they simmer together.
  • Feeds a crowd: This recipe yields plenty for a family dinner, guests or satisfying leftovers for the week.

Ingredients

For the marinara sauce

  • San Marzano whole peeled tomatoes – two 28-ounce cans (or any high-quality whole tomatoes). Use the can juices; do not drain.
  • Garlic cloves – fresh, crushed for best flavor.
  • Dried oregano – adds classic Italian herb notes.
  • Sugar – helps balance tomato acidity.
  • Salt – for seasoning and balance.
  • Red pepper flakes – optional, for a touch of heat.
  • Fresh basil leaves – stirred in at the end for brightness.

For the meatballs

  • Onions – finely chopped so they cook down in the slow cooker.
  • Garlic – crushed or finely minced.
  • Ground beef – 80/20 blend recommended for tender, juicy meatballs.
  • Loose Italian pork sausage – remove from casings if using links.
  • Panko breadcrumbs – for structure and light texture.
  • Parmesan cheese – freshly grated for best flavor.
  • Egg yolks – bind the mixture (you can reserve the whites for another use).
  • Italian seasoning – a balanced blend of dried herbs.
  • Kosher salt and black pepper – to taste.

Instructions

Below are clear, step-by-step directions for assembling and cooking the marinara and meatballs in the slow cooker. The optional step of briefly broiling the meatballs helps them hold together during long cooking.

  1. Make the marinara: Pour unopened cans of whole tomatoes (including juices) into the slow cooker. Crush the tomatoes by hand until mostly broken up, leaving some small chunks for texture. Add crushed garlic, dried oregano, sugar, salt and red pepper flakes. Stir to combine.
  2. Mix the meatball ingredients: In a large bowl combine the ground beef, loose Italian pork sausage, finely chopped onions, crushed garlic, panko breadcrumbs, grated Parmesan, egg yolks, Italian seasoning, salt and pepper. Gently mix until just combined — do not overwork the meat.
  3. Shape the meatballs: Form the mixture into about 40 golf ball–sized meatballs. Keeping the meatballs a consistent size helps them cook evenly.
  4. Optional but recommended — broil briefly: Line a baking sheet with foil and place meatballs under a high broiler for 4–6 minutes to brown the outsides slightly. This quick step firms them up and reduces the chance they’ll fall apart in the slow cooker.
  5. Cook in the slow cooker: Gently nestle the meatballs into the marinara so they’re coated in sauce. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  6. Finish with basil: Stir in 1/2 cup fresh chopped basil at the end of cooking to brighten the sauce.
  7. Optional — cook pasta in the slow cooker: If you’d like to cook the spaghetti directly in the sauce, add 8 ounces of uncooked spaghetti and press it down so it’s submerged. Break the noodles if needed to fit. Cook on low for 30–40 minutes or on high for 25–30 minutes, checking for doneness. Note: noodles cooked in the sauce will release starch, slightly thickening the marinara.
  8. Serve: Spoon meatballs and sauce over pasta or serve with pasta mixed in. Top with fresh grated Parmesan and extra basil if desired.

What to serve with it

Serve meatballs and marinara in bowls or on a platter. Garnish with freshly grated Parmesan and torn basil leaves. These meatballs pair well with a crisp green salad, roasted vegetables or crusty bread for sopping up sauce. They also make hearty meatball subs or an excellent party appetizer on toothpicks.

Tips and tricks

  • Don’t over-mix: Combine the meatball ingredients only until they’re just incorporated. Over-mixing will yield dense meatballs.
  • Broil for stability: Briefly browning the meatballs before slow-cooking helps them hold their shape.
  • Advance prep: Form the meatballs up to three days ahead and refrigerate, or freeze them for up to six months and add frozen meatballs straight to the slow cooker.
  • Swap jarred sauce if needed: You can use two 24-ounce jars of your favorite marinara in place of the homemade sauce for an even quicker method.
  • Pasta options: Any dry pasta will work. Thicker shapes like penne or ziti may require slightly longer cooking times if cooked in the slow cooker.
  • Gluten-free option: Replace panko with a gluten-free breadcrumb alternative and serve with gluten-free pasta or vegetables.
  • Make it spicy: Add a teaspoon of red pepper flakes to the meatball mix for heat.

Storage and reheating

Refrigerate: Store leftover meatballs and sauce in an airtight container for up to 6 days.

Reheat: Warm gently in a saucepan over medium heat for 10–12 minutes until heated through, or use the microwave for 2–3 minutes, stirring once.

Freeze: Cool completely, then transfer meatballs and sauce to a freezer-safe container for up to 6 months. Defrost overnight in the refrigerator or use a quick microwave defrost before reheating. Avoid freezing cooked pasta with the sauce; cook fresh pasta when serving reheated meatballs for best texture.
