Coconut Crab Cakes topped with a bright Mango Arugula Salad — a tropical-inspired recipe that works beautifully as an appetizer or a light entrée.

On a recent Memorial Day weekend trip to Philadelphia for a family wedding, I made it a point to explore the city’s food scene. Alongside the inevitable cheesesteaks, one recommendation stood out: Cuba Libre, a Cuban restaurant known for its tapas-style brunch. There we discovered Coconut Crab Fritters — crispy, slightly sweet, and utterly addictive. Back home, that memory became the inspiration for these Coconut Crab Cakes with a Mango Arugula Salad.
The crab cakes are crisp on the outside and tender inside, with a subtle coconut sweetness that complements fresh lump crab meat. Topping them with a simple mango and arugula salad adds bright acidity and peppery greens, balancing the richness of the cakes. They make a great summer appetizer for a party or an elegant weeknight dinner when served with extra salad and lemon wedges.

Coconut Crab Cakes Ingredients
- 1 egg, whisked
- 2 tbsp red bell pepper, minced (about 1/8 cup)
- 2 tbsp red onion, minced (about 1/8 cup)
- 1 tbsp fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 8 oz lump crab meat
- 1/4 cup panko bread crumbs
- 1/4 cup coconut flakes
- 2 tbsp coconut oil (for frying)
- 1 lemon, sliced into wedges
Mango Arugula Salad Ingredients
- 2 cups arugula
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 cup mango, diced
- 1 avocado, diced
Instructions
- In a large bowl, whisk the egg and add the minced red bell pepper, red onion, chopped cilantro, minced garlic, grated ginger, sea salt, and black pepper. Mix until evenly combined.
- Add the lump crab meat, panko bread crumbs, and coconut flakes. Gently fold the mixture so the crab meat stays in chunks but everything holds together. Be careful not to overmix.
- Form the mixture into 6–8 small crab cakes or 2–3 larger cakes, depending on your preference.
- Heat the coconut oil in a large skillet over medium heat. When the oil is hot, add the crab cakes and cook 3–4 minutes per side, until golden brown and crisp. Transfer to a paper-towel-lined plate to drain briefly.
- To make the salad, toss the arugula with olive oil and lemon juice, then gently fold in the diced mango and avocado.
- Serve the crab cakes topped with a spoonful of the mango arugula salad. Offer lemon wedges on the side for squeezing over the cakes.

Notes & Serving Suggestions
- Yield: makes about 8 small crab cakes (serves 4 as an appetizer) — or 2–3 large cakes for a main course.
- For extra crunch, lightly toast the coconut flakes before mixing them in.
- To keep the crab cakes warm while cooking in batches, place them on a baking sheet in a 200°F (90°C) oven.
- Gluten-free option: use gluten-free panko or crushed gluten-free crackers in place of panko.
- Make-ahead: form the cakes and refrigerate them for up to 24 hours before cooking. Cook from chilled straight into the skillet.
- Leftovers store well in the fridge for 1–2 days; reheat gently in a skillet or oven to maintain crispiness.
