This recipe is a long-standing favorite in our family and comes from my husband, who has made these cucumber sandwiches for years. They’re consistently popular at gatherings because they are fresh, easy to prepare, and crowd-pleasing.

The key to the bright, savory flavor is a simple trick: fold zesty Italian dressing mix into softened cream cheese. That seasoned cream cheese pairs beautifully with thin cucumber slices and a sprinkle of dill, creating a light, elegant tea sandwich or small appetizer.

I like to use rye cocktail or pumpernickel party bread for bite-size sandwiches, but you can also make full-size sandwiches on standard rye bread for lunch. Both versions are delicious, portable, and ideal for picnics, showers, brunches, or light meals.

  • Cucumbers – about 1 pound, or two medium cucumbers. English cucumbers are great because they’re thin-skinned and have fewer seeds, but regular cucumbers are fine once peeled and sliced.
  • Dill and salt – a light sprinkle of salt and either dried or fresh dill brings out the cucumber’s flavor and completes each bite.

  1. Soften the cream cheese by leaving it at room temperature for about 30 minutes, or warm briefly in the microwave for 20–30 seconds until spreadable.
  2. Mix the softened cream cheese with the zesty Italian dressing mix until evenly combined and smooth.
  3. Spread a thin layer of the seasoned cream cheese over each slice of rye cocktail bread.
  4. Peel the cucumbers if desired and slice them into 1/4-inch rounds. Place one or more cucumber slices on each cream cheese–topped piece of bread.
  5. Lightly sprinkle salt over the cucumber slices, then finish with a pinch of dried dill or a bit of chopped fresh dill. Serve immediately for the best texture.

  • 2 tablespoons zesty Italian dressing mix (or one 0.7-ounce packet)
  • 12 ounces rye cocktail bread (party bread)
  • 1 pound cucumber (about 2 medium cucumbers)
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried dill, or 1 teaspoon fresh dill, chopped

Instructions

  1. Soften the cream cheese by leaving it at room temperature for 30 minutes or microwaving it briefly until spreadable.
  2. Combine the softened cream cheese with the zesty Italian dressing mix, blending until smooth.
  3. Spread the seasoned cream cheese on each slice of rye cocktail bread.
  4. Peel and slice the cucumbers into 1/4-inch rounds. Lay cucumber slices atop each cream cheese–coated piece of bread.
  5. Sprinkle a small pinch of salt and some dried or fresh dill over the cucumbers. Serve immediately to avoid sogginess.

Notes

  • To make full-size cucumber sandwiches, use standard rye bread: spread cream cheese on one side of two slices, layer 10–15 cucumber slices on one slice, season with salt and dill, then close with the second slice.
  • Full-size sandwiches can be cut into quarters or squares to serve as tea sandwiches or appetizer bites.
  • Assembled sandwiches are best served immediately. Cucumbers release moisture over time and can make bread soggy if prepared too far in advance.
