Making it in a slow cooker solves two common holiday frustrations: not enough oven space and trying to time every dish so it’s hot all at once. Start this in your slow cooker a few hours before the meal and let it keep warm until you’re ready to serve.

  • 2 tbsp butter
  • 3 cups sweet potatoes, peeled and diced
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh sage, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 cups chicken or vegetable broth, divided
  • 1 (12 oz) bag herb stuffing mix

  1. In a large pot over medium heat, melt the butter.
  2. Add the diced sweet potatoes, chopped celery and diced onion. Sauté for 4–5 minutes, stirring occasionally.
  3. Add the minced garlic, chopped sage and thyme, salt and pepper. Sauté another 1–2 minutes until fragrant.
  4. Pour in 1 cup of the broth, bring to a gentle boil, and cook until the sweet potatoes are almost tender, about 6–8 minutes.
  5. Stir in the herb stuffing mix until evenly combined.
  6. Add the remaining 1 cup of broth, stir, then transfer the mixture to a slow cooker.
  7. Cook on low for 3–4 hours, stirring once or twice if possible. Keep warm until ready to serve.
