Ingredients

  • 2 tbsp butter
  • 8 oz baby bella or crimini mushrooms, sliced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 2 lb beef chuck roast
  • 2 cups beef broth
  • 16 oz wide egg noodles
  • 1 cup half-and-half
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Turn the Instant Pot to the sauté function on the normal setting and add the butter.
  2. When the butter has melted, add the mushrooms, onion and garlic and sauté for 4–5 minutes until softened.
  3. In a small bowl, mix the salt, black pepper and paprika. Rub this seasoning blend all over the beef chuck roast.
  4. Push the mushrooms and onions to the sides of the pot. Place the seasoned roast in the center and sear for 2–3 minutes per side.
  5. Cancel sauté. Pour in the beef broth and scrape up any browned bits from the bottom of the pot.
  6. Secure the lid and set the steam release to sealing. Select Manual (High Pressure) and set the timer for 60 minutes.
  7. When cooking is complete, turn off the Instant Pot and let pressure release naturally for 15–20 minutes, then release any remaining pressure and open the lid.
  8. Remove the roast to a cutting board and shred it with two forks.
  9. Add the wide egg noodles to the pot with the remaining broth, onions and mushrooms. Reseal the lid and set to High Pressure for 5 minutes.
  10. When the 5-minute cook time ends, wait 5 minutes, then perform a quick release and open the lid.
  11. Return the shredded beef to the pot. Stir in the sour cream, half-and-half and Parmesan until the sauce is smooth and creamy.
  12. Serve the stroganoff immediately, garnished with chopped fresh parsley.
